Grape varieties: Red grapes, typical of Salento. Area: San Marzano, Salento, Apulia. About 100 metres above sea level. Soil: Medium-textured, clayey, shallow with a good presence of skeleton. Cultivation: Sapling not less than 50 years old (4,500 per hectare). Harvest: September. Vinification: Manual harvesting of the slightly overripe grapes; destemming-crushing, cold pre-fermentation maceration and subsequent start of alcoholic fermentation with indigenous yeasts. Final racking with soft presses. Ageing: Malolactic fermentation in stainless steel tanks followed by 12 months in French oak barriques. Organoleptic characteristics: Ruby red colour with purple reflections; intense and complex bouquet with fruity notes of plum and jam and spicy tertiary scents reminiscent of vanilla and liquorice; intense on the palate, with great structure and softness, long finish. Pairings: Robust first courses, red meats and game. Meditation wine. Serve at: 18 °C. Alcoholic Grade: 14,5% vol.
