cuisine.Winemaker's notesThis important wine is produced in the best years, when the grapes are vinified separately, parcel by parcel. In this way, we obtain a strict
respect for the territorial typicality and the pedoclimatic variety. Alcoholic fermentation takes place at controlled temperature in steel vats at 27° with constant punching
down for about 10 days, followed by post-fermentation maceration on the skins for another 10 days. The malolactic transformation takes place in cold tanks. HistoryRiserva
