Vinification: Harvest and grape selection by hand; gentle pressing and clarification of the must by natural sedimentation of the lees; slow fermentation at controlled temperature in stainless steel tanks; ageing and maturation for 6 -7 months on the fine lees in steel tanks.

Recommended with: Plateau de fruits de mer with raw crabs and Norway lobsters; vegetable risotto and cream soups cooked from root vegetables (potato soup, Sellerei cream soup), dishes in which a not too spicy, pleasant cheese (e.g. a soft Robiola) is processed, such as cheese dumplings or a pasta dish with cheese; also sea bass prepared in a salt crust or veal paillard
