In 1989 the course was first set for what is probably the most famous white wine of the St. Michael-Eppan Winery. For over 20 years, the Sauvignon Sanct Valentin has
found first-class conditions in the carefully selected individual vineyards at the foot of the Mendelstock to produce a great top wine with captivating fruit, excellent minerality
and persistence. Today, this noble drop is not only the pride of the house and the most important wine of the Sanct Valentin line, but also one of the most awarded white
wines in Italy.
Grape variety: Sauvignon
Vine age: 10 to 33 years
Growing area: Site: best vineyards in St. Michael and 'Eppan Berg' (450-650m)
Exposure: south-east
Soils: Calcareous gravel soils
Method of cultivation: Guyot
Harvest: Early to mid-September; harvest and grape selection by hand.
Vinification: The majority (75%) is fermented in steel tanks, where the wine is aged on the fine lees until the end of April. The rest (25%) is fermented and aged in tonneau.
Yield: 45 hl/ha
Analytical data:
Alcohol content: 14.5%
Acidity: 6,45 gr/lt
Drinking temperature: 8-10°.
Recommended consumption:
An exquisite accompaniment to exclusive parties and special occasions.
Excellent with roasted fish such as redfish, sole or char.
on a cream of peppers, but also with spicy vegetable risotto.
