Wine description: multi-layered bouquet of cassis, white pepper, dried fruit and chocolate. Full-bodied, powerful body with well-structured tannin. Juicy and long lasting finish. Terroir: Sun-exposed steep slopes with high clay content in Missian and St. Pauls (350m.a.s.l.). Age of the vines: approx. 20 years Vinification: slow fermentation in open wooden vats and maturation on the fine lees in used tonneaux for 12 - 15 months Recommended with: grilled meats, meat dishes and hard cheeses. Serving temperature: 16°-18°C Alcohol: 13.0% vol. Total acidity: 4.7 g/l Residual sugar: 0.3 g/l
