'On the southern slopes of the Tschöggelberg there are very sunny and steep vineyards in the Terlan DOC area, where a very exciting Pinot Blanc thrives at an altitude of between 450 and 650 metres above sea level. This full-bodied and extremely complex wine impresses in particular with its minerality as well as its considerable capacity for development, thereby underlining the full potential of this variety.' Vinification: hand harvest and grape selection; soft whole cluster pressing and clarification of the must by natural sedimentation from the lees; slow fermentation at controlled temperature in large oak barrels (70 & 30 hl); partial malolactic fermentation and ageing for 12 months on the fine lees in traditional wooden barrels.
Food pairing: Ideal in combination with a spicy fish soup but also peppered mussels as well as spaghetti allo scoglio; at the same time interesting with gratinated mussels, grilled octopus or braised char; also goes well with the difficult to combine artichokes alla romana; with an aged pecorino, an aged parmesan with mostarda.
Character: Colour: brilliant straw yellow with green nuances Nose: A multi-faceted bouquet characterised by ripe fruit notes such as honeydew melon, white peach, pears and golden delicious apples, as well as aromas of quince jelly, camomile and pineapple, and a delicate mineral note of flint. Taste: The interplay of fruity-aromatic and salty taste components is also repeated on the palate. The compact structure with elegant melting makes for a spicy, long- lasting, punchy mineral finish.
