Production: Exclusive use of the cuvée Long ageing on fine skins for 6-7 months (5-10% in wood of the blanche base) Maturation on the lees: minimum 3.5 years

Sight: Bright, clear, with pale gold tints interwoven with fine bubbles. Nose: Freshness from the Chardonnay, aromas of white-fleshed fruit, ethereal touches of peony expressed by the Pinot Noir. A more spicy, complex range with aromas of dried apricots and almonds. Palate: Roundness and generosity accompany a beautiful verticality. Crisp nectarine, notes of honey, saffron and pepper, well delineated by a nice bitter finish.
Food pairing: ideal as an aperitif or to be enjoyed throughout a meal with dishes such as scallops, shellfish or rock fish. It can also be paired with risotto, fine white meats or cheeses.
