The grapes for this prestigious Sylvaner come from the sun-drenched vineyards around the Säben monastery, the 'Acropolis of Tyrol'. The strict selection, the uncompromising yield reduction and the gentle vinification in acacia wood barrels give this wine its unmistakable character.
The wine Vintage 2021 Grape variety Sylvaner Growing altitude 550 - 700 m Soil: mineral-rich, poor, stony diorite and quartz phyllite weathered soils Vinification: The grapes are exclusively harvested by hand. After a short maceration period, the grapes are gently pressed. This is followed by temperature-controlled alcoholic fermentation and maturation for 10 months on the fine lees, partly in stainless steel tanks, partly in large wooden barrels. Colour: greenish yellow to light yellow Aroma: fresh, strong, with pithy acidity, long-lasting finish Taste: elegant, fresh-fruity, mineral earthy aroma, reminiscent of peach and green apples.
