Colour: garnet red of medium intensity with orange reflections. Nose: sour cherries in spirit, nice officinal trace, fresh pepper, with a salty caper finish. Mouth: dense, savoury tannins and beautiful persistence. Finish with return of salty tones.
CURIOSITY Produced from 5 cru vineyards in Barolo: Liste, Cannubi, Fossati, Cannubi San Lorenzo, San Pietro delle Viole. Spontaneous fermentation without added yeasts in cement tanks, with subsequent submerged cap maceration for at least 30 days at a temperature of 29°. After racking, malolactic fermentation is triggered, about 15 days at a constant temperature of 22 C. Matured in large Slavonian oak for 4 years, then 6 months in bottle.
