TASTING NOTES: Deep ruby red colour. Ethereal, intense, typical aroma of red fruit with hints of vanilla. Palate is elegant, harmonious, persistent. It becomes more austere and mature 3-4 years after harvesting. VINIFICATION: The grapes are harvested at the end of September and vinified in red after prolonged maceration on the skins. AGEING AND REFINING: The wine matures for at least 12 months in 225 and 500 litre French oak barriques and tonneaux. In bottle for at least one year FOOD PAIRINGS: Goes very well with red meats, game and mature cheeses
