a great pleasure to drink.'
Rudi Kofler
Wine:
Region of Origin: South Tyrol - Italy
DOC area: South Tyrol
Variety: 100% Gewürztraminer
Yield: 40 hl/ha
Orientation: South - Southwest
Slope: 5 -25
Altitude: 300 - 400 m
Vinification:
Harvest and grape selection by hand; gentle whole bunch pressing and clarification of the must by natural sedimentation from the lees; slow fermentation at controlled
temperature and and maturation for 9 months on the fine lees partly in large wooden barrels (50%) partly stainless steel tank (50%); assemblage three months before
bottling.
Technical data:
Alcohol content: 15.0% vol.
Residual sugar: 6,3 g/l
Total acidity: 5,5 g/l
Serving temperature: 12 - 14 °C
Food pairing: Interesting with sweet and sour combinations typical of Asian cuisine, with grilled scorpion fish or swordfish but also with pink roasted slices of pigeon breast;
pumpkin gnocchi with walnuts and albatrüffeln on balsamic dressing but also rice pudding refined with cinnamon; also with lightly arborinated cheese, such as a mild
Gorgonzola.
Character: Colour: bright, intense golden yellow.
Nose: A finely woven and dense nose characterises this Gewürztraminer selection, revealing a tropical-exotic scent of rose petals, lime, lychee and orange. Taste: The fruity
aroma appears emphatically juicy and clear on the palate, and is underpinned by a fine melt and salty notes.
