Cannonau di Sardegna Controlled Designation of Origin, Reserve Characteristics
Colour: intense ruby red with garnet hues. Nose: intense and elegant with a pleasant hint of red fruits, spices and Mediterranean herbs. Taste: warm, round, with good structure and excellent balance. Soil: Calcareous-clayey. Refinement: bottle-aged. Ageing: Evolution in small oak barrels for 12 months. Vinification: Alcoholic fermentation with maceration at controlled temperature between 25-28°C for about 12-15 days. Malolactic fermentation in vitrified cement tanks. Pairings: First and second courses, both traditional and traditional Sardinian, meat and vegetable dishes, well seasoned and medium and long aged cheeses.
