Fermentation at a controlled temperature of 28-32 °C. Maceration for about 16-18 days with good use of the delestage technique. COLOUR: intense red PERFUME: Rich and complex bouquet. PAIRINGS: wild boar stew, furred game, spicy red meats, mature Sardinian percorino cheese. FLAVOUR: highly structured, balanced, fine and persistent. Index of souplesse, i.e. velvety envelopment, very high. AGEING: 18-24 months in new French oak barriques. Matured for 12-14 months in bottle.
