Pas Operé, a blend of Chardonnay and Pinot Noir, is the result of a rigorous vineyard selection process, so much so that it only comes from the historic plots that are over 30 years old and have a predominantly southeastern exposure. The choice of no less than 40 vintage selections aims to define an essential, refined and elegant expression, without compromise. A cuvée, of course, designed to last and evolve over time, as immediately expressive as it is long-lived. An exuberant white mousse is accompanied by a perlage of unparalleled persistence and finesse, while the aromas are immediately complex, even in their essentiality.
