The white deep limestone gravel soil has a high humus content. Climate: The Mediterranean climate is characterised by warm summers and mild winters as well as the warm south wind Ora blowing from Lake Garda in the afternoon. Vinification: The grapes of the LAVOT Cabernet Riserva are harvested by hand. After crushing, the must ferments in steel tanks with gentle maceration. Subsequent ageing for 12 months in barrique barrels and a further year in bottle.
