RAW MATERIAL: Apples (from mainly small trees). Clay soil, rich in nitrogen and potassium.
DISTILLATION: Before making the cider, the apples are blended and pressed, washed and treated to extract the pulp of the fruit on the one hand, and the must on the other,
which must macerate for at least 6 weeks before being bottled.
COLOUR: Dark amber
BOUQUET: The bouquet is rich and fleshy, with hints of spices, honey, cinnamon and dried fruit.
PAIRINGS: Excellent if drunk alone, surprising if paired with very strong cheeses, and exceptional with quality dark chocolate
TASTE: The taste is truly amazing, with a unique aromatic intensity and extreme length.
