The pomace is collected fresh from selected suppliers and is stored for several months, starting from the time of harvesting the grapes of origin. In this fundamental phase it is very important to preserve them from the air according to a delicate method of covering the silos to allow a favourable environment for the yeasts responsible for alcoholic fermentation. Distillation is carried out in a discontinuous plant with eight copper stills, using direct steam.
