This very important stage is carried out slowly in an ancestral manner with the help of ancient water piston presses, which respect the crushing of the grapes to allow the juices to pass through the skins. The wines produced are carefully distilled in a still, made by artisans, refined in a copper mass which is indispensable for obtaining refined eaux-de-vie. A double distillation of the wines gives rise to the prestigious and incomparable spirit that is COGNAC.
