Classification<br /><br />South Tyrol DOC<br />Growing region<br /><br />The grapes chosen for this exceptional wine grow in Girlan on the hills of the Überetsch at an altitude of 450 - 500 m above sea level. The vineyards are planted with 15 to 20<br />year old vines and are cultivated using the Guyot system. The soil of the cultivation area is rich in minerals formed by sediments from the ice age.<br />Vinification and ageing<br /><br />The grapes are harvested by hand and delivered in small containers. After subsequent whole bunch pressing, the must is clarified from the lees by natural sedimentation.<br />Fermentation takes place in 12 and 15 hl French oak barrels, followed by malolactic fermentation. This is followed by ageing on the fine lees for 12 months and storage in<br />the bottle for a further 6 months.<br />Wine portrait<br /><br />Of elegant structure and beautiful consistency with intense fruity notes. Excellent structure, spicy and mineral with a long finish on the palate. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust. Very<br />fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range with<br />sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. The particularity of this vineyard contributes to the development of<br />botrytis, which produces a great dessert wine.<br />Vinification and ageing:<br />The grapes are harvested by hand at the end of November and delivered in small containers. After a short maceration and gentle whole bunch pressing, the must is clarified<br />from the lees by natural sedimentation. Fermentation takes place over the period of 6 months in small oak barrels and ageing for 15 months also takes place in small oak<br />barrels.<br /><br />Wine portrait:<br />Aromas of dried fruit, ripe apricots and quince form the aroma components, rounded off with a fresh breeze of citrus fruits. In the mouth, the wine is soft, full, with a<br />pronounced sweetness, long-lasting in the finish. The Spätlese Pasithea Oro is drunk as a dessert wine with desserts, but it also goes perfectly with blue cheese, mature<br />and spicy cheeses. It is the winery's most important red wine. This grape variety is a<br />very special challenge for the winemaker, as it is very demanding in terms of soil and climate, and must also be processed with special care in the cellar. For the Pinot Noir<br />Sanct Valentin, which has been part of the prestige line since 1995, only grapes from the best vineyards and oldest vines are used. Extremely low yields and the greatest<br />care produce an elegant and highly sensual wine, characterised by structure, balance and fine tannins.<br /><br />Eye: Ruby red<br />Nose: aromas of small berries, violets and smoky vanilla.
