Pian delle Vigne 2015...

Pian delle Vigne 2015...

Pian delle Vigne 2015
Classification DOCG
Vintage 2015

Climate: 2015 will be remembered as a great year in Montalcino. Winter and spring rainfall, capable of guaranteeing the accumulation of good water reserves in the soil,
alternated with sunny and breezy days that allowed a rapid and homogeneous growth of the grapes in May and June. A generally hot summer favoured the regular
development of the grapes. The tramontana wind and the warm weather in September allowed the grapes to ripen in an optimal manner. Harvesting began on 21 September
and ended on 7 October.

Vinification: On arrival in the winery, the grapes were destemmed and softly crushed, then transferred to stainless steel tanks where alcoholic fermentation took place.
Maceration lasted about fifteen days at a temperature of 28 °C. After malolactic fermentation, the wine was transferred to oak casks of between 30 and 80 hl where it began
its maturation in wood. After more than two years, Pian delle Vigne left the large cask and began its long refinement in the bottle.

Historical data: Tenuta Pian delle Vigne, located 6 km southwest of Montalcino, takes its name from the village of the same name, where there is a characteristic 19th
century railway station. The estate consists of 184 hectares, 65 of which are vineyards mainly exposed to the south-west at an altitude of about 130 metres above sea level.
Pian delle Vigne has always followed the philosophy of the large barrel, which preserves the extraordinary integrity of the Sangiovese fruit and gives Brunello its
characteristic vibrant elegance. The winery has been owned by the Antinor family since 1995, the year of the first harvest of Pian delle Vigne Brunello di Montalcino DOCG.

Tasting notes: Pian delle Vigne 2015 has an intense ruby red colour. The nose is complex, impactful, characterised by notes of ripe red fruit and violets accompanied by
sensations of dried flowers, cocoa powder, cherries under spirits and spices such as oregano and marjoram. On the palate it is elegant, rich and complex, with soft, supple
tannins. The freshness of certain sensations perceived on the nose can also be found on the palate.
Reserve della Contessa 2020...

Reserve della Contessa 2020...

Réserve della Contessa - the feminine wine.

Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.

Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).
Colour: strong yellow with greenish reflections.
Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.
Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at
300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is
a strong loamy limestone soil with rock deposits from ice-age glaciers.
Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden
barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.
Serving temperature: 10 - 12 °C.
Goes well with: starters, fish and white meat.
Mason 2017 Bio MANINCOR 750ml

Mason - the sensitive companion.

It nestles silkily against the skin, cherries, blackberries and roses linger for a long time, and the coveted Pinot Noir makes the mind sensual at the right time.

Grape variety: Pinot Noir.
Colour: bright, rich ruby red.
Aroma and taste: Raspberries and cranberry fruit, some rose petals and liquorice, ripe in fruit and fresh in spice, fruity and delicate on the palate, velvety and at the same
time firm from the tip of the tongue to the finish.
Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-
facing plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam and
interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.
Vinification: Each batch from the different parcels was vinified separately. The maceration took place in wooden vats, spontaneously with the grape's own yeasts. Maceration
lasted two weeks, with the marc cake being macerated once a day. The 12-month wooden barrel ageing took place in barriques, with only 10% new wood and the wine
remaining on the fine lees for the entire time. Only then were the individual parcels blended, selecting the best barrels from the highest parcel with the oldest vines for Mason
di Mason.
Serving temperature: 16 -18 °C.
Pairings: roasted and grilled (red) meats, game and matured soft cheeses.
Champange Dom Pérignon...

Champange Dom Pérignon...
2009: THE PINNACLE OF MATURITY

2009 brings to a close in the best possible way a prodigious, sunny, bold and generous decade. This continuation of favourable weather conditions is unprecedented, and
the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is
driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the
promise of a wine full of freshness and energy.

NOSE
The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla
and warm, delicately toasted brioche.

PALATE
The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is
extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.

CULINARY PAIRINGS
The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.
The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works
perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.
