Le Petit - true greatness.<br /><br />Green reflections in a bright, luminous yellow - there is also a flash of foreboding: 'This is something special!' Sweetness of selected elegance and unexpected freshness<br />fulfil the promise.<br /><br />Grape variety: Petit Manseng.<br />Colour: sparkling golden straw yellow.<br />Aroma and taste: fruity aromas of mango, lychee, dried apricots; complex depth due to fine honey and botrytis notes, balanced play between sweetness and acidity on the<br />palate.<br />Site and soil: Mazzon in Kaltern at 400 m above sea level, a high plateau sloping towards the south, sunny and airy, ideal for the late harvest. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Maturation: The slow pressing of the sultana berries took eight hours, fermentation took place in wooden barrels, spontaneously with the grape's own yeasts. The must<br />fermented slowly for several months; at 11% alcohol, the fermentation stopped all by itself. An optimal balance between alcohol, acidity and sugar are the natural result.<br />Serving temperature: 8-10 °C.<br />Pairing: Delicate desserts and very good with final cheese.<br />

Originates from eucalyptus trees, which are<br />very common in the Mediterranean region.<br /><br />Plattner Bienenhof Eucalyptus Honey comes from the eucalyptus trees, which are very common in the Mediterranean region, and it tastes unusually spicy-malty like<br />caramel or cappuccino. On the nose, the honey is rather atypical with notes of dried mushrooms, wet leaves and liquorice. Eucalyptus honey crystallises quickly and then<br />changes colour to beige-grey. Like the essential oils of the plant, our Plattner Bienenhof eucalyptus honey is used to treat colds and respiratory infections. It is also exciting<br />to combine eucalyptus honey with ripened cheese: sheep's milk or Parmigiano, for example.<br /><br />On average, honey contains about 17-19% water, about 70% simple sugars (carbohydrates in the form of glucose and fructose), about 2.5% sucrose, about 0.1% other<br />sugars and about 8% other substances. These naturally occurring components are: Acids, lactones, mineral salts, proteins, amino acids, vitamins, colloids and aromatic<br />substances.<br /><br />Honey, with about 300 kilocalories per 100 grams, is an energy-rich natural product, quickly digestible and well and rapidly absorbed by the body.<br /><br />Honey is a living food!<br /><br />It is even said to have some interesting positive properties on the human body: sedative (calming), antiseptic (germicidal), antianemic (increases red blood cells), diuretic<br />(increases water excretion), and many more.<br /><br />The freshly harvested honey is liquid, but can crystallise over time. This continuation of favourable weather conditions is unprecedented, and<br />the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />

For us, Rosso di<br />Montalcino is a wine of primary importance. For its production we use grapes from dedicated vineyards that receive the same attention and care that we give to those<br />destined for the production of Brunello. The uniqueness of the terroir is reflected in that of the wine, which expresses all the passion for the land and the vineyard and the<br />meticulous work that is the result of a long multi-generational experience. The strong recognisability of this wine is also due to our mass selection of Sangiovese.<br /><br />DENOMINATION: Rosso di Montalcino DOC<br />GRAPEVINE: 100% Sangiovese<br />HARVEST: annual in the first week of September.<br />VINIFICATION: Manual selection of the bunches before destemming and selection of the grapes with an optical selector. This is followed by spontaneous fermentation<br />without the use of added yeasts and maceration assisted by frequent punching down.
