Muffato della Sala 2013<br />Classification Umbria IGT<br />Vintage 2013<br />Climate<br />The 2013 vintage was a cool one, with excellent weather conditions for white wines. Frequent rainfall was accompanied by mild temperatures and no temperature extremes.<br />Thanks to the very favourable climatic conditions in September and October, the noble rot gradually covered the grapes, with no risk to their health, concentrating the sugars<br />and increasing the aromatic complexity. Harvesting began towards the end of October with the Traminer, followed by the Riesling, Sauvignon and Sémillon, and concluded<br />towards the end of November with the Grechetto.<br />

Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

Mason 2017 Bio MANINCOR 750ml

Mason - the sensitive companion.<br /><br />It nestles silkily against the skin, cherries, blackberries and roses linger for a long time, and the coveted Pinot Noir makes the mind sensual at the right time.<br /><br />Grape variety: Pinot Noir.<br />Colour: bright, rich ruby red.<br />Aroma and taste: Raspberries and cranberry fruit, some rose petals and liquorice, ripe in fruit and fresh in spice, fruity and delicate on the palate, velvety and at the same<br />time firm from the tip of the tongue to the finish.<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Vinification: Each batch from the different parcels was vinified separately. The maceration took place in wooden vats, spontaneously with the grape's own yeasts. Maceration<br />lasted two weeks, with the marc cake being macerated once a day. The 12-month wooden barrel ageing took place in barriques, with only 10% new wood and the wine<br />remaining on the fine lees for the entire time. Only then were the individual parcels blended, selecting the best barrels from the highest parcel with the oldest vines for Mason<br />di Mason.<br />Serving temperature: 16 -18 °C.<br />Pairings: roasted and grilled (red) meats, game and matured soft cheeses.<br />

Sweetness of selected elegance and unexpected freshness<br />fulfil the promise.<br /><br />Grape variety: Petit Manseng.<br />Colour: sparkling golden straw yellow.<br />Aroma and taste: fruity aromas of mango, lychee, dried apricots; complex depth due to fine honey and botrytis notes, balanced play between sweetness and acidity on the<br />palate.<br />Site and soil: Mazzon in Kaltern at 400 m above sea level, a high plateau sloping towards the south, sunny and airy, ideal for the late harvest. The soil is sandy loam and<br />interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.<br />Maturation: The slow pressing of the sultana berries took eight hours, fermentation took place in wooden barrels, spontaneously with the grape's own yeasts. The must<br />fermented slowly for several months; at 11% alcohol, the fermentation stopped all by itself. An optimal balance between alcohol, acidity and sugar are the natural result.<br />Serving temperature: 8-10 °C.<br />Pairing: Delicate desserts and very good with final cheese.<br />

Pale often yellowish-golden honey, smells sweet and unobtrusive, reminiscent of vanilla in the mouth, is obtained from the nectar of the (often) white robinia flowers.<br /><br />Our Plattner Bienenhof Acacia Honey is harvested from the large (often) white flowers of the false acacia (robinia). Its mildly fine, sweetish taste is reminiscent of vanilla and<br />its smell of fresh beeswax and delicate flowers. Acacia honey is very popular with children, suitable as a sweetener and remains liquid for a long time. Our Plattner<br />Bienenhof Acacia Honey comes from natural, intact forests.<br /><br />On average, our honey contains approx. 17-19% water, approx. 70% simple sugars (carbohydrates in the form of glucose and fructose), approx. 2.5% sucrose, approx.<br />0.1% other sugars and approx. 8% other substances. These naturally occurring components are: Acids, lactones, mineral salts, proteins, amino acids, vitamins, colloids<br />and aromatic substances.<br /><br />Honey, with about 300 kilocalories per 100 grams, is an energy-rich natural product, quickly digestible and well and rapidly absorbed by the body.<br /><br />Honey is a living food!<br /><br />It is even said to have some interesting positive properties on the human body: sedative (calming), antiseptic (germicidal), antianemic (increases red blood cells), diuretic<br />(increases water excretion), and many more.<br /><br />The freshly harvested honey is liquid, but can crystallise over time. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />
