There are also more northerly growing areas, such as in the Vinschgau region of South Tyrol, from where we get our apricots. Apricots<br />have a special nutritional value. <br />Reserva Heredad<br />Reserva Heredad was created to express style, in the world of top of the range sparkling wines. We make it with the objective of offering an elegant, versatile Cava. To do<br />this, we select only the very best wines from each vintage, which will then age in bottle, in contact with the lees, for more than 30 months. This ageing ends when the winery<br />expert gives every bottle the magic touch with the last poignettage or shake of the wrist, which intensi- fies the contact of the lees with the wine, and creates a more<br />complex bouquet.<br /><br />THE VINEYARDS<br />The grapes are 100% hand harvested and transported to the winery in 25kg capacity self draining plastic boxes to prevent grape damage, and thereby avoiding the<br />possibility that the juice might oxidise, with a consequent loss of freshness.<br /><br /><br />IN THE CELLAR<br />The must for Reserva Heredad comes from the lightest pressing of the grapes. We only use the first 50% of the juice pressed. This is known as the flower must, as it is<br />the most aromatic and delicate. The first fermentation takes place in stainless steel tanks at a controlled low temperature of between 14 and 16°C, to retain the primary<br />aromas of the grapes. The blend for Reserva Heredad is made up of nine different wines, each one vinified in separate tanks. The magic of the blend is in ensuring that each<br />one lends its own touch of character to the whole. Macabeo is the dominant grape in Reserva Heredad, contributing acidity and freshness. It also allows the wine to age<br />well, during the 30 months or more that it will be in contact with the lees. Both the first and the second fermentations are carried out using our own selected yeast strains.<br />These give structure, softness on the palate, more complex aromas (honey, dried fruits and flowers), as well as an elegant and persistent mousse. Before disgorgement we<br />give each bottle a last sharp shake, or twist of the wrist, known as a poignettage, lifting the yeast cells from the side of the bottle, and mixing them once more with the<br />wine, thus intensifying the element of autolysis. The riddling or turning of all the bottles of Reserva Heredad is done by hand and in pupitres.<br /><br /><br />IN GLASS<br />Straw yellow in colour, with a small, fine, plentiful mousse. The opening aromas are of the ageing on lees, lightly smokey, with touches of biscuit or bread, which are<br />followed by hints of honey, fruit and flower petals. The palate is excellent, fruity and full of flavour, with dried fruits from the lees ageing, but very elegant, giving the drinker a<br />delightful sense of abundance.<br /><br /><br />ON THE TABLE<br />This Cava defines elegant refreshment, even in its presentation. It is a perfect companion to truffle influenced dishes, such as truffle oil drizzled pastas. White fish - sole or<br />monkfish à la meunière, or even traditional Mediterranean casseroles are perfect companions, as are cooked or cured hams, and soft white cheeses such as brie or<br />camembert. It marries perfectly with meat dishes, such as fillet of venison slow braised in a shallot sauce.<br />

The historic vineyard is part of the monastery complex, where the vines stand on pure alluvial material from<br />the Talfer and a subsoil of Bolzano quartz porphyry. IN THE CELLAR<br />After fermentation and acid reduction in stainless steel, the wine is aged in new barrique barrels for 22 months, followed by harmonisation in enamelled steel tanks and<br />careful bottling after light filtration.<br />TASTING NOTES<br />The Klosteranger appears in deep garnet red and seduces with a bouquet of concentrated aromas. It is surprisingly lively and fruity on the nose with notes of coffee and<br />black berries as well as a hint of raspberries. On the palate, it convinces with grippy tannins, fresh acidity, delicate as well as elegant fullness and depth. Our single-vineyard<br />Lagrein is wonderfully complex, long-lasting and pampers the palate with a multi-layered structure. The new range is named 'Soleo' after the traditional<br />process of sun-drying the grapes that creates the basis of sherry making. The result is a single malt with hints of vanilla, lemon and butter bread.<br /><br />How I drink it: best enjoyed neat or on the rocks, it is also perfect for mixing cocktails. The juicy black fruit flavours linger into the rich luscious finish.<br />Pairing suggestions<br />The rich black fruit flavours of Bin 27 are a perfect match for chocolate and berry fruit dishes. A chocolate fondant with strawberries makes a deliciously hedonistic<br />combination with Bin 27, the rich creamy chocolate and luscious ripe strawberries blending seductively with the blackcurrant and cherry fruitiness of the wine. At the time the market for Port was undergoing a profound change. Consumers were becoming more<br />knowledgeable and demanding in their choice of wine. No longer content with the simple young Ports that until then had accounted for much of consumption, they sought<br />more sophisticated and distinctive wines both to enjoy at home and when dining out.<br />

Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our<br />winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,<br />indicate great ageing potential.<br />Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.<br />Yield: 45 hl/ha<br />Altitude: from 400, more from 500 - 600 metres<br />Exposure: south-east 90%, south 10%.<br />Harvest: end of September - mid-October<br />Bottles produced: about 48,000, 760 magnums and some large sizes<br />Soil: calcareous gravel mixed with clay<br />Age of vines: 10 - 40 years<br />Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains<br /><br />Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled<br />temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.<br /><br />AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. Gewürztraminer Vigna 'Kastelaz' 2020<br /><br />The Vigna 'Kastelaz' is a unique steep slope directly above the wine village of Tramin and is one of the exclusive southern vineyards of South Tyrol. A 'Vigna' is an<br />additional designation of origin; the term stands for a precisely delineated and mapped vineyard. Due to its extreme slope of up to 63 degrees, the Vigna 'Kastelaz' is<br />elaborately laid out in narrow terraces. Moreover, it is entirely south-facing - a rarity in South Tyrol. Kastelaz is a side fan of postglacial origin and consists of a layered<br />structure of loose limestone soils interspersed with sand and hard rock such as granite and porphyry. The microclimatic conditions of the Vigna 'Kastelaz' are also rich in<br />contrasts: during the day the vines can benefit from the warm, extremely sunny southern exposure, while from late afternoon a strong wind and later the fresh evening<br />mountain air provide cool temperatures. Here, between 330 and 380 metres above sea level and with extremely low vine yields, some of Elena Walch's absolute top wines<br />are produced.<br /><br />'The Gewürztraminer Vigna 'Kastelaz' has long been one of the most famous Gewürztraminers on the international scene. It presents itself with a rich, golden yellow colour<br />and a beguilingly complex bouquet: elegant and mineral, with aromas of roses and lychee as well as some acacia honey in the background. The wine is also convincing and<br />complex on the palate: with an elegant structure, stimulating acidity, harmonious, spicy freshness and a delicate, juicy finish. A wine with a lot of finesse and character!'<br /><br />LESE 2020<br />Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early<br />development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The<br />autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.<br />The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show<br />very good structure and straight, fine fruit.<br />VINIFICATION Before pressing, the grapes are left to macerate for about 6 hours. Gentle pressing and static pre-clarification of the must by cooling.
