It is extracted only with the 'Sinolea' machine, which manages to obtain oil without production stress. Maceration for about 16-18 days with good use of the delestage technique.<br />COLOUR: intense red<br />PERFUME: Rich and complex bouquet.<br />PAIRINGS: wild boar stew, furred game, spicy red meats, mature Sardinian percorino cheese.<br />FLAVOUR: highly structured, balanced, fine and persistent. TYPE: Dry red wine<br />PRODUCTION AREA: Basso Sulcis in our farms of Narcao and Barrua<br />GRAPE VARIETIES: 85% indigenous, 15% French.<br />SOIL TYPE: Soils tend to be of medium texture, clay, sandy and calcareous.<br />VINIFICATION: the must ferments with the skins at a temperature between 25 and 30 degrees in temperature-controlled stainless steel tanks for a period of about 15 days,<br />the entire mass is subjected to periodic pumping over to facilitate the passage into solution of the compounds present in the marc. This grape variety most likely originates from Germany and was introduced to South Tyrol around 1900; today it is mainly cultivated in the Eisack Valley. The Sylvaner grape<br />feels particularly at home in the not too high, airy and warm slopes of the central Valle Isarco. <br />TYPOLOGY: Port<br />PRODUCTION AREA: Douro<br />RAW MATERIAL: Touriga Nacional, Touriga Franca, Tinto Cão, Tinta Francisca, Tinta Amarela, Sousão, Tinta Roriz and others.<br />VINIFICATION: The grapes used to produce the LBV Port come from the vineyards of Cima Corgo, an area located above the Corgo River in the Douro region. The grapes are<br />pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate.
