Facing the Mediterranean Sea, they benefit from a unique reflection of the sun, a<br />moderate breeze from the coast and the abundance of sunlight promotes unique ripening.<br /><br />Training system: Spurred Cordon<br />Planting density: 3,600 vines/Ha for old vineyards; 5,600 vines/Ha for new vineyards<br /><br />Climatic trend: 2016 was certainly one of the most regular vintages of the last decade. Rainfall met the vines' needs punctually: abundant in March, regular in May and June,<br />important at the end of July and, finally, a warm and sunny August and mid-September. Temperatures were optimal: a mild end to the winter that had caused concern was<br />then regularised by a tenably cool spring that slowed down the development of the bunches, which then benefited from the hot but not torrid summer, with significant<br />temperature swings. Cluster growth was regular and optimal, production was good and ripening was perfect.<br /><br />Harvest period: Harvesting was strictly by hand and took place for the Petit Verdot and Cabernet Sauvignon grapes from mid-September. After an initial selection in the<br />vineyard at the time of manual harvesting, the Lupicaia grapes are carefully selected a second time on arrival at the winery on the sorting table.<br /><br />Winemaking notes: After manual selection on the sorting table, the grapes are gently destemmed and pressed, taking care not to break the skin of the berries. Meticulous<br />alcoholic fermentation takes place in our stainless steel open-cap fermenters at a controlled temperature with maceration of the grapes for about 20 days. Daily dèlestages<br />allowed the perfect extraction of the bouquet<br />aromas and the right tannic balance, with an important structure that will allow for long ageing.<br /><br />Ageing: Ageing takes place in new French oak tonneaux for a period of about 22 months followed by further ageing in bottles before release.<br />

Calabria and the Old Customs Warehouse were my life. Every day was like the first, we were engrossed in the work we loved more than anything else. We watched with<br />passion as Giocondo, who had a flair for everything in his trade, a man of few words and a master of life. The botanicals in his hands expressed extraordinary and<br />sometimes unthinkable things. The harvesting of bergamot and citron was a sacred time for him, and one that was sure to hold secrets. Jefferson was the most curious. He<br />would always try to follow him, most often surreptitiously, to try to understand what the secret was to producing such a natural and unique bergamot and citron liqueur. We<br />would leave, even before dawn, with his little cart and empty baskets to reach that magical place, even further south than the Old Customs Warehouse, four, maybe five<br />hours away. Once there, I was struck by the scents in that wonderful garden, something unique and magical. Giocondo with much patience and control began picking the<br />fruits one by one, which were sacred to him, he had a deep respect for the place. Once finished we set off for home, strangely enough I had the impression that it took much<br />less time than the outward journey, perhaps it was because of the desire to fulfil a dream. When we arrived, Giocondo wasted no time in starting the work. I still remember<br />his rough hands full of the essences of those wonderful fruits. He would complete the work by taking it to his 'Dark Room', no one could get in there. He always repeated:<br />'Silence!'. I always thought there was something secret and mysterious there. I hope that those who will be lucky enough to taste this liqueur will not seek explanations or<br />mathematical formulas, but will experience the passion, the emotions and the sacrifices of those who work the land every day to create this.<br /><br />Family heritage. So says the label. Products created by the skill of Maestro Giocondo, owner of the Vecchio Magazzino Doganale and expert in fruits, herbs and spices, but<br />above all adoptive father and guide of our characters. That year my back pain was<br />tormenting me more and more every day. My salvation, as usual, was Gil. The doctor found in Sila, by chance or luck, something unique and wonderful, a kind of mud that<br />he expertly heated in a container over hot coals. It was miraculous for my pain. The experience gained on one of his trips to London led him towards the creation of a<br />masterpiece. With the very rural technique of peating, he managed to distil an out-of-this-world 'peated' gin ... Too bad it was little.<br /><br />Gil Torbato Italiano. The only peated Gin in the world. A distillate born thanks to the richness of our territory, in Calabria, in the beautiful setting of Sila, we brought peat back<br />to light. In fact, some historical books speak of it as a real wealth. In an ancestral way, we combine our 'low altitude' juniper with peat to create Italian Torbato Gin, always<br />keeping faith with the rural distillation method. A true explosion of terroir.
