Praeclarus Brut<br />Blanc de Blancs South Tyrol DOC<br /><br /><br />Perfumed South Tyrolean joie de vivre. Elegance, freshness, harmony and complexity. Animating and seductive. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust.<br />Very fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range<br />with sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Maturation of the base wine in large wooden barrels for several months, followed by traditional bottle<br />fermentation and 40 months of maturation on the fine lees at a naturally constant temperature in the historic bunker.<br />Recommended with: Classic as an aperitif.<br />Alcohol: 12,5 % vol.<br />Ingredients: contains sulphites<br />

Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of<br />our winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,<br />indicate great ageing potential.<br />Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.<br />Yield: 45 hl/ha<br />Altitude: from 400, more from 500 - 600 metres<br />Exposure: south-east 90%, south 10%.<br />Harvest: end of September - mid-October<br />Bottles produced: about 48,000, 760 magnums and some large sizes<br />Soil: calcareous gravel mixed with clay<br />Age of vines: 10 - 40 years<br />Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains<br /><br />Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled<br />temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.<br /><br />AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. A rarity in the Alpine region are sites with a microclimate in which even red late varieties reach the stage of full ripeness. Loam Cabernet-Merlot owes its exceptional<br />character to the weather-protected location and the special nature and heat storage capacity of the soils of its vineyards.<br /><br />Vintage description: the winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused an early and rather uneven budding in the<br />well-supplied soils. A cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity<br />and a lot of careful manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative<br />effects. A significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the<br />harvest. The harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are<br />characterised by particular elegance. Warm, fresh and rightly savoury, it shows round tannins and a nice softness. The finish has an excellent taste-<br />olfactory persistence.<br />Pairings: With roasted and braised meats, succulent meat dishes, mature cheeses.<br />Serving temperature: 16-18°C<br />Ideal glass: a large Bordeaux-type goblet.<br />

Teroldego Rotaliano Superiore DOC Riserva<br />THE MASO<br /><br />Within the framework of Trentino oenology, Teroldego has always had a prestigious role and for this reason it is called the 'prince wine' of Trentino. No one has so far<br />been able to say anything certain about its origin. Some say that a long time ago the Teroldego, a vine variety cultivated in the Veronese area, was brought to that large<br />nest called Campo Rotaliano, others, instead, date its origins back to the hills of Sorni, while others maintain that the name Teroldego derives from the German Tiroler Gold,<br />that is, Gold of the Tyrol. What is certain is that the first entry of the name of this vine in literature dates back to the 18th century in the oenological disquisitions of<br />Michelangelo Mariani, historiographer of the Council of Trent.<br /><br />Production area: from vineyards located in the most suitable areas of Campo Rotaliano in Trentino, in the municipality of Mezzolombardo. The soil is alluvial on gravel<br />banks of the Noce torrent, shallow, tends to be loose and well drained.<br /><br />Grape varieties: 100% Teroldego, a native Trentino vine. The yield per hectare is limited to no more than 80 quintals of grapes per hectare.<br /><br /><br />Analytical data: -Alcohol: 13,50% vol -Total acidity: 5,20g/l -Net dry extract: 30,80g/l-Sugars: dry-Contains sulphites<br /><br />Organoleptic characteristics: extremely dense ruby red wine with violet hues.
