Ripassa Valpolicella Ripasso DOC Superiore<br /><br /><br />Immediately after the fermentation of the Amarone raisins, the best selection of Valpolicella 'ripassa' on the Amarone marc, starting the second short fermentation; in this<br />way the alcohol content increases and a product richer in colour, extracts and aromas is obtained.<br /><br />After ageing in French oak tonneaux for 18/20 months, it is then left to rest in the bottle for 6 months.<br /><br />The result of this process is a refined and concentrated wine, extremely soft and velvety, with intense aromas of small red fruits.<br /><br />Ripassa offers fruity scents and fine tannins on the palate, with an aura of chocolate and spices. It represents one of the most significant wines in Zenato's oenological<br />evolution.<br /><br />Grape varieties: 85% Corvina Veronese, 10% Rondinella, 5% Corvinone.<br />Geographical location and characteristics of the vineyard: hilly area of Valpolicella, south-eastern and south-western exposure.<br />Average altitude of the land: 250-300 metres above sea level.<br />Soil type: predominantly cretaceous, calcareous<br />Training system and planting density: guyot, with about 5,000 vines per hectare.<br />Average age of vines: 10/15 years old<br />Number of buds: 8/10 per plant<br />Yield per hectare: 100 quintals<br />Harvest time and method: first and second ten days of October. Manual harvesting.<br />Vinification: The grapes are destemmed and macerated in stainless steel fermenters for 10-12 days. After alcoholic fermentation, the new wine is separated from the skins<br />by means of a soft press and stored in steel tanks until January, when the dried grapes are pressed to produce Amarone. At this point, the Valpolicella is 'repassed' on the<br />Amarone marc with a 7-8 day period at a temperature of 25-28°C. This is followed by 18 months of refinement in tonneaux and a few months of bottle ageing in<br />temperature-controlled environments.<br />Colour: deep ruby red.<br />Bouquet: intense, fine and persistent, with hints of black cherry and plum.<br />Taste: harmonious and velvety, with good structure.<br />Serving temperature: 18°C<br />Food pairings: an excellent companion to game dishes, grilled meats and roasts, cured meats and mature cheeses.<br />

Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust.<br />Very fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range<br />with sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of<br />our winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,<br />indicate great ageing potential.<br />Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.<br />Yield: 45 hl/ha<br />Altitude: from 400, more from 500 - 600 metres<br />Exposure: south-east 90%, south 10%.<br />Harvest: end of September - mid-October<br />Bottles produced: about 48,000, 760 magnums and some large sizes<br />Soil: calcareous gravel mixed with clay<br />Age of vines: 10 - 40 years<br />Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains<br /><br />Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled<br />temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.<br /><br />AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August.
