Moscato Giallo 2019 BIO 750ml

Moscato Giallo 2019 BIO 750ml

Moscato Giallo - grapes in a glass.

Five times a day fruit and vegetables, they say. With our cheerfully bright Goldmuskateller made from sun-soaked grapes - properly tempered - a joy!

Grape variety: Goldmuskateller.
Colour: bright straw yellow.
Aroma and taste: delicate scents of nutmeg, cedar wood and grapefruit. Fruity, juicy, mineral and with a persistent aroma.
Site and soil: Mazzon near Kaltern at 350 m above sea level, a very steep, south-facing slope with extreme sun exposure and warm gravel soils with moraine deposits.
Vogelleiten on Manincor, an extremely steep site with loamy cold gravel soil.
Vinification: The destemmed grapes remained in the press for twelve hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden
barrels, partly spontaneously with the grape's own yeasts. During the four months of ageing on the fine lees, the aroma and flavour were refined.
Serving temperature: 8 -10 °C.
Goes well as an aperitif, with Asian cuisine and with strong hard cheeses.
Le Petit MANINCOR 2014 375ml

Le Petit MANINCOR 2014 375ml

Le Petit - true greatness.

Green reflections in a bright, luminous yellow - there is also a flash of foreboding: 'This is something special!' Sweetness of selected elegance and unexpected freshness
fulfil the promise.

Grape variety: Petit Manseng.
Colour: sparkling golden straw yellow.
Aroma and taste: fruity aromas of mango, lychee, dried apricots; complex depth due to fine honey and botrytis notes, balanced play between sweetness and acidity on the
palate.
Site and soil: Mazzon in Kaltern at 400 m above sea level, a high plateau sloping towards the south, sunny and airy, ideal for the late harvest. The soil is sandy loam and
interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones.
Maturation: The slow pressing of the sultana berries took eight hours, fermentation took place in wooden barrels, spontaneously with the grape's own yeasts. The must
fermented slowly for several months; at 11% alcohol, the fermentation stopped all by itself. An optimal balance between alcohol, acidity and sugar are the natural result.
Serving temperature: 8-10 °C.
Pairing: Delicate desserts and very good with final cheese.
Champange Dom Pérignon...

Champange Dom Pérignon...
2009: THE PINNACLE OF MATURITY

2009 brings to a close in the best possible way a prodigious, sunny, bold and generous decade. This continuation of favourable weather conditions is unprecedented, and
the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is
driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the
promise of a wine full of freshness and energy.

NOSE
The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla
and warm, delicately toasted brioche.

PALATE
The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is
extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.

CULINARY PAIRINGS
The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.
The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works
perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.
The uniqueness of the terroir is reflected in that of the wine, which expresses all the passion for the land and the vineyard and the
meticulous work that is the result of a long multi-generational experience. Sang.Cab.Franc.Merlot HAIKU...

Sang.Cab.Franc.Merlot HAIKU...

HAIKU 2016
Tuscany I.G.T.
Haiku was born in 2009 and is the result of a blend of three varieties: 50% is Sangiovese, while the remainder is equally divided between Cabernet Franc and Merlot. During
the planting of the second part of the Montebuoni vineyard, completed in 2001, it was decided to experiment with a noble international variety, Cabernet Franc, which until
then had not been used at Ama. However, after a careful analysis of the soil and climate, it was assumed that Cabernet Franc would give good results. In 2001, two small
plots were planted, numbered 84 and 85 in the company's land register, of 1.47 ha and 0.47 ha respectively, for a total surface area of 2 hectares with clone 214,
appreciated in the Bordeaux area for its ability to produce 'vins-de-garde' on rootstock 110R.

CLIMATE: The winter was mild and rainy. In April we had a rapid rise in temperature, while May and June were unstable. Finally, summer arrived in July, with a wide range of
temperatures between day and night, which favoured the development of aromas and flavours. Despite the hailstorm at the end of August, the grapes were healthy. After
numerous samplings and organoleptic analyses in the vineyard and in the laboratory, the grapes were picked by hand, in 10/12 kg crates, on 14 September for the Merlot,
28 September for the Cabernet Franc and 29 September for the Sangiovese.

VINIFICATION: vinification was induced by indigenous yeasts and separated by variety in steel vats at a controlled temperature between 30/32°C, with manual pumping over
and a total stay of 26 days for the Merlot, 23 days for the Cabernet Franc and 23 days for the Sangiovese. After racking, the wine underwent malolactic fermentation in steel
tanks.

AGING: at the end of malolactic fermentation, the three varieties were blended. The wine then went into fine-grained oak barriques, 24% of which were new.
TECHNICAL DATA OF THE WINE:
First vintage produced: 2009
Grapes: 50% Sangiovese, 25% Cabernet Franc, 25% Merlot
Alcohol content: 13.5
Total acidity: 5.03 g/l
Residual sugars: 1 g/l
Extract: 30.5 m/l
Colour: intense purple red with ruby reflections
Bouquet: still hermetic, closed nose, with hints of ripe fruit and balsamic notes
Taste: full and velvety tannic structure prevails in the mouth. Wine of ample volume and longevity.
Chianti class. 2016...

AMA 2016
Chianti Classico DOCG

With the 2010 vintage and the birth of the Gran Selezione in Chianti Classico, AMA was born almost entirely from Sangiovese grapes. This wine is produced from vines
cultivated at a high density (5,200 plants/ha), with grapes harvested entirely by hand in young vines of an average age of 10-12 years.

CLIMATE: The winter was mild and rainy. In April we had a rapid rise in temperature, while May and June were unstable. After numerous samplings and organoleptic analyses in the vineyard and in the laboratory, the grapes were harvested by hand in 10-12 kg crates on 26 September
for the Merlot and on 3-4 October for the Sangiovese. After racking, the wine underwent malolactic fermentation in steel tanks.

AGING: At the end of malolactic fermentation, the two varieties were blended.
