Laudemio Frescobaldi 2022<br />Italian Extra Virgin Olive Oil<br /><br />For 700 years, the Frescobaldi family has lovingly cultivated over 300 hectares of olive groves between 200 and 500 metres above sea level, where the microclimate gives the<br />olives unique characteristics in terms of freshness and intensity of aromas and flavours. In autumn, the olives are harvested early, before ripening, to capture their emerald<br />green colour and aromatic freshness. The olives are always pressed within a few hours of harvesting, in the estate's own mill in Castello Nipozzano. These rules guarantee<br />absolute quality excellence. Finally, Frescobaldi carries out a strict selection process and only the extra virgin olive oil with the best organoleptic characteristics is selected<br />to become Laudemio Frescobaldi.<br /><br />Climatic trend<br />Summer 2022 will be remembered as a decidedly hot and sunny season. The olive tree, a Mediterranean plant par excellence, strongly benefited from both high average<br />temperatures and long sunny days. The fruit set at the beginning of June was abundant and continued with luxuriant growth throughout the summer. Rainfall was scarce in<br />June and July, becoming more abundant from the second half of August, which allowed the plants good rehydration in the crucial phase of the start of oil accumulation in the<br />olives. From September to the beginning of the harvest, average temperatures began to fall with a wide temperature range between day and night, which stimulated the<br />development of polyphenols and aromatic substances that characterise the great oils of central Tuscany. Harvesting and pressing began on Monday 10 October.<br /><br />Tasting notes<br />Laudemio Frescobaldi 2022 has a strong and pungent character. The colour is intense, emerald green. The aromas recall the fruit from which it comes, a freshly picked and<br />crushed olive. On the palate, the bitterness and spiciness combine in a balanced manner, and typical Tuscan flavours such as artichoke and wild rocket emerge. In the<br />mouth it is very clean and astringent with a long, pungent persistence.<br />

Gin infused dark Chocolate by Karuna<br /><br />Aroma profile: juniper, wild berries, herbs and spices.<br />75% Chuncho cocoa from Peru<br />Made in South Tyrol<br />Vegan &amp; Organic<br /><br />Dark organic chocolate 75% made from Chuncho cacao (Peru), flavoured with EDELSCHWARZ Organic Gin.<br /><br />This chocolate has a complex aroma profile: juniper, wild berries, herbs and spices.<br /><br />We roast the cocoa, macerate the cocoa curd for several days with 20% EDELSCHWARZ Organic Gin and then dry the cocoa curd. Alcohol and water evaporate<br />completely and the cocoa absorbs the aromas from the gin. Edelschwarz Organic Gin is made from 17 Alpine botanicals, including: Juniper, Edelweiss, Cranberry, Currant<br />and various herbs.<br /><br />The cocoa variety 'Chuncho' is one of the oldest cocoa varieties that is only rarely found. The Maya already used this type of cocoa. The chocolate made from the original<br />Chuncho cocoa is multi-layered, aromatic and melts delicately. Not far from the fascinating Inca site of Machu Picchu, the Chuncho cocoas grow in the Urubamba Valley,<br />defying the passage of time. Cocoa scientists believe that the ancient chunchos are among the most aromatic cocoas in the world. A successful fair trade campaign allows<br />more cocoa to be bought directly from the farmers at fair prices. Crumbly nougat with almonds and honey in oval 'gondola' box<br />Mandorlato Scaldaferro is a confectionery product made from roasted almonds mixed with honey, sugar and egg whites whipped until the mixture becomes white, creamy<br />and soft: everything is cooked very slowly.<br />The mixture is then worked by hand, cut into sticks and immediately wrapped while still warm to preserve its aroma and fragrance.<br />The ingredients, all of the highest quality, are one of the product's secrets, such as the special blend of honeys combined to give Mandorlato an unmistakable bouquet, and<br />the Italian almonds carefully selected and roasted directly by the Scaldaferro family.<br />The processing procedure, which involves several hours of baking in a bain-marie, not found in industrial nougats, makes Mandorlato Scaldaferro crumbly and immediately<br />recognisable, characterised by a 'frothy' texture and a slightly amber colour.<br />Another inimitable characteristic of Scaldaferro almonds is that they are laid by hand.
