The thermal values characterise a rather warm environment with very low<br />annual rainfall and very high temperature variations, which has a positive effect on the quality of the grapes. This is the classic growing area for Primitivo di Manduria PDO.<br />Soil: Red residual soil with a fine texture, calcareous substrate and sparse rock outcrops. The famous red hue of these soils is due to the high content of iron oxides.<br />Harvest: Mid-September<br />Vinification: Hand-picking of slightly overripe grapes; destemming and maceration, maceration at 8°C for 24-48 hours before fermentation. Thermally controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final bottling with soft presses.<br />Maturation: Malolactic fermentation in stainless steel tanks followed by 12 months in French and American oak barriques.<br />Organoleptic characteristics: Very deep and elegant ruby red colour; rich and complex bouquet, fruity with notes of plums, cherry jam with a slight spiciness and hints of<br />tobacco. <br />Talò Negroamaro Salento I.G.P.<br />750 ml<br /><br />In San Marzano, the vine-growers take care of their small vineyard as they would of a garden.<br />Their stories are many, as are the names of their families.<br />We have chosen one, Talò, to thank them ideally: family for family, story for story.<br /><br />Grape variety: Negroamaro.<br />Area: San Marzano, Salento, Apulia. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (4,500 vines per hectare).<br />Harvest: Mid-September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French oak barriques for 6 months.<br />Organoleptic characteristics: Colour purple red with violet reflections: intense and persistent bouquet, with hints of blackcurrants and berries, spicy, with balsamic and vanilla<br />notes. Vintage Collection Extra Brut 2018<br />Denomination: Franciacorta Millesimato.<br />Grape varieties: Chardonnay 65%, Pinot Nero 29%, Pinot Bianco 6%.<br />Original vineyards: 17 Chardonnay vines, with an average age of 28 years, located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and<br />Passirano. 7 Pinot Nero vines, with an average age of 29 years, located in the municipalities of Erbusco and Passirano. 2 Pinot Bianco vines, with an average age of 29<br />years, located in the municipality of Passirano.<br />Harvest: 2018. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (wine yield: 43%).<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The<br />grapes, freshly hand-picked into small crates, are graded and cooled. Each bunch of grapes is selected by expert eyes and hands, to then benefit from exclusive 'grape<br />spas'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the<br />base wines ferment in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the barrel elevage lasts only 5<br />months. A pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. After 7 months from the harvest, the cuvée is created.<br />The 2018 Vintage Collection Extra Brut is the result of a skilful blend of 26 base wines of Chardonnay, Pinot Blanc and Pinot Noir that give the finished product a particular<br />profile, rich and complex. The higher proportion of Pinot Noir gives it power and nobility, further reinforced by a long bottle ageing. The dégorgement takes place in the<br />absence of oxygen, using a unique system invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta<br />wines purer, more pleasant and longer-lived. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta wines<br />purer, more pleasant and longer-lived. Baffonero 2019<br />Tuscan Maremma DOC<br />Baffonero is the Grand Cru, 100% Merlot, of Rocca di Frassinello. It takes its name from a 3.5 ha vineyard with perfect exposure and a medium-clayey soil very rich in<br />skeleton. Merlot clones from Château Lafite were planted here. The name Baffonero is inspired by a Maremma story that evokes the wild boar hunting typical of the area.<br />Today, Baffonero tells not only these anecdotes, but also the strength and elegance of a unique land like the Maremma.<br />Notes vintage 2019: a very variable season. In spring and early summer, temperatures were below the seasonal average, and the rains, during flowering, delayed the<br />subsequent phenological phases, lengthening the plant's vegetative cycle. The months of July and August, but above all September, were followed by very sunny weather<br />with high, but not very high, temperatures and significant temperature swings between day and night; a situation that favoured perfect phenolic ripening of the grapes. The<br />Merlot bunches were perfectly intact, healthy and juicy at the time of harvest.<br />Tasting notes: this pure Merlot reveals aromas characterised by a variety of black fruits, particularly blackberry and blueberry, but also notes of vanilla, tobacco, chocolate<br />and slight hints of coffee. The true Chianti Classico, therefore, without the addition of international grape varieties such as Cabernet or<br />Merlot, in order to maintain the authentic formula of the most famous of Italian wines while at the same time seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury.
