ORNELLAIA 2020 'LA P ROPORZIONE'<br />- BOLGHERI DOC SUPERIORE RED<br />Ornellaia was born from the encounter between nature and thought. Ancient and complex soils dialogue through the wisdom of man with a delicate microclimate that finds<br />its echo and mirror in the Mediterranean Sea. Long ageing accompanies the estate's great wine to its fullest expression, revealing over time its finesse, breadth and<br />generosity.<br /><br />E NOLOGIST'S TASTING NOTES<br />50% Cabernet Sauvignon, 32% Merlot, 13% Cabernet Franc, 5% Petit Verdot Alc. 14.5% vol. 'With its usual intense ruby red colour, Ornellaia 2020 is characterised on the<br />nose by aromas of ripe red fruit and delicate notes of vanilla and sweet tobacco. On the palate the wine is soft and velvety, with a pleasant, enveloping mouthfeel that invites<br />a second sip. The tannic texture is dense and at the same time elegant and the finish is savoury and beautifully persistent.' - Olga Fusari - Winemaker - July 2022<br /><br />THE CLIMATE OF 2020<br />After a mild and rainy winter, March saw a temporary drop in temperatures with a few nights below 0°C right at the start of budding in the last week of the month. The newly<br />budded shoots were, however, still protected by the cotton bud tissue, which prevented frost damage. The rest of spring saw generally warm weather with normal rainfall,<br />ensuring regular vegetative development until flowering, which took place between 20 and 25 May. In June, a passage of heavy rainfall towards the middle of the month was<br />followed by a very long dry period with a substantial absence of rain and torrid temperatures until the end of August. The veraison took place evenly and quickly between 20<br />and 25 July, starting the ripening of the grapes under a blazing sun. Rains arrived at the end of August, which led to a considerable drop in temperatures, with night-time<br />lows as low as 13°C, ideal conditions for completing the ripening of the Merlots. They were harvested early and quickly, in just two weeks, in order to preserve as much<br />freshness and fruitiness as possible, just in time to avoid a sudden week-long heat wave where the thermometer marked up to 37°C, causing sugar levels to soar for all the<br />varieties still to be harvested, leading us to begin harvesting Cabernet Franc and Cabernet Sauvignon from the young vineyards as early as 17 September. Towards the end<br />of September, a passage of rain finally brought the weather conditions back to normal, the water absorbed by the grapes lowered the alcohol levels back to normal values,<br />allowing us to conclude the harvest of Cabernet Sauvignon and Petit Verdot on 3 October.<br /><br />VINIFICATION AND FINING<br />Harvesting was carried out by hand in 15 kg crates and the grapes were sorted on a double sorting table before and after destemming and then subjected to a soft crushing.<br />In 2016, optical sorting was introduced in addition to manual selection to further increase the quality of the selection. Each variety and each plot was vinified separately.<br />Alcoholic fermentation took place partly in stainless steel vats and partly in concrete vats at temperatures between 26 and 30°C for a week, followed by a maceration period<br />of around 15 days, with a total stay in the vats of around three weeks. Malolactic fermentation took place mainly in oak barrels (70% new and 30% second passage). The<br />wine remained in barriques in the<br />Ornellaia cellar at a controlled temperature for a period of about 18 months. After the first 12 months, it was blended, then reintroduced into the barriques, where it spent a<br />further 6 months. Lagrein Riserva Vigna 'Castel Ringberg' 2019<br />South Tyrol DOC<br /><br />The Renaissance castle of the Vigna 'Castel Ringberg', built by the Habsburg dynasty in 1620, towers above Lake Kaltern and is surrounded by the vineyards of the single<br />vineyard site. A 'Vigna' is an additional designation of origin; the term stands for a precisely delineated and mapped vineyard. The vineyards of the Vigna 'Castel Ringberg',<br />which alternate between moderate and steep slopes, are located at a unique intersection of three different soils: in the west, the dolomite rock of the Mendel ridge<br />accompanies the vineyards, while the steep slopes consist of 30,000-year-old gravel from the ice-age river Adige. In the southern and central parts, the larger areas consist<br />of loose limestone rubble, which aerates the vine roots well. In addition, the mildness of Lake Kaltern, coupled with strong afternoon southerly winds, allows for gentle,<br />natural cultivation with deliberately small-scale production. The microclimate and geological conditions at an ideal altitude of 330 to 400 metres above sea level offer optimal<br />conditions for wines of incomparable character. 'Castel Ringberg' Lagrein Riserva Vigna invites with a strong garnet red and with a fruity-fresh, multi-layered bouquet:<br />Aromas of red berries with cranberries, currants and cherries combine with delicate tobacco notes and a little chocolate. Velvety soft tannins, a fresh, spicy richness and<br />structure, youthful elegance and plenty of charm as well as a stimulating, mineral-tinged length convince on the palate.'<br /><br />2019 vintage: The 2019 wine year presents itself as a classic South Tyrolean vintage with solid good quality, albeit a smaller harvest. This year's differences in harvest date<br />and quantity between vineyards at different altitudes were significant. After an initially warm spring, followed by a cooler April-May with a delayed rise in high temperatures in<br />the summer, the harvest could be scheduled to begin in the second week of September. These classic for South Tyrol - now historic - harvest dates around two weeks later<br />than in 2018 allow the grapes to benefit from the vaunted 'golden South Tyrolean autumn' with warm days and already cool nights. Especially the vineyards at higher<br />altitudes, where the maturity is reached later, were able to benefit from the very best weather conditions in late autumn.<br /><br />VINIFICATION: Fermentation on the skins for about 10 days followed by acid reduction. Maturation for 20 months in French barriques. Subsequent filling and long ageing in<br />bottle. Since 2015, a state-of-the-art fermentation cellar has allowed the grapes to be processed with the utmost care, with whole-grape processing and also the processing<br />of whole grapes using gravity. The sensitive destemmer and the gentle transport of the grapes by means of a 'cuvon', a container on rails, prove to be extremely gentle on<br />the grapes and preserve their high quality. Cabernet 'Istrice' 2020<br />South Tyrol DOC<br /><br />Cabernet 'Istrice' was Elena Walch's first red wine. At that time consisting of a predominant proportion of Cabernet Franc and only a little Cabernet Sauvignon, the wine<br />showed 'its spines', just like the little hedgehogs in the park of the family winery. Today, the percentage of 'Istrice' has exactly reversed with 90% Cabernet Sauvignon and<br />about 10% Cabernet Franc. Although it shows less of its spines, it has gained in elegance and finesse and continues to be one of the favourites at Walch.<br /><br />'The Cabernet 'Istrice' captivates with a strong intense ruby red and with stimulating fruity aromas in the nose, with red forest berries and heart cherries as well as seductive<br />spice with white pepper and chocolate. On the palate, the wine surprises with refreshing richness and structure, with elegant, precise tannins and fruity-spicy density, as<br />well as a long, juicy finish.'<br /><br />LESE 2020<br />Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early<br />development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The<br />autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.<br />The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show<br />very good structure and straight, fine fruit.<br /><br />VINIFICATION<br />Traditional maceration of about 10 days in steel tanks. Followed by malolactic fermentation in wooden barrels. Pinot Nero 2022<br />South Tyrol DOC<br /><br />VINEYARDS: 100% Pinot Noir<br /><br />VINIFICATION: Traditional maceration for 10 days at controlled temperature in steel barrels. Subsequent malolactic fermentation and ageing in medium French oak barrels<br />(22hl) and partly in steel tanks.<br /><br />DEGUSTATION: The Pinot Noir Elena Walch presents itself with a clear, fresh ruby red. A fruity play of aromas with red berries, cherries and raspberries as well as spicy<br />notes with some white pepper characterise the nose. On the palate, the wine convinces with a juicy structure and inviting freshness, with soft, velvety tannins, discreet spice<br />in the background as well as a youthfully elegant finish.<br /><br />TERROIR: An interesting combination of vineyards in fresher sites between 400m a.s.l. up to 600m a.s.l.. Limestone and porphyry soils in south-eastern and south-western<br />exposure. Harvested and selected by hand with the utmost care.<br /><br />LESE 2022: An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar.<br />The 2022 wine year started with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The<br />drought did not lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy<br />grapes of very good quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the<br />summer, as well as a somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand.
