<br />Eligo of Ornellaia<br />Grappa Riserva<br /><br />Eligo dell'Ornellaia Grappa Riserva is an expression of Ornellaia's philosophy that a rigorous process of grape selection in the vineyard and at every stage of production is<br />fundamental to creating the best possible quality.<br /><br />With the arrival of autumn, after the Ornellaia wines have been transferred to French oak barrels for ageing, the marc is entrusted to an artisanal distillery in the heart of the<br />Tuscan countryside. Here the master distiller, armed with his expertise, extracts the delicate aromatic heart from the skins of Cabernet Sauvignon, Merlot, Cabernet Franc<br />and Petit Verdot.<br /><br />After patient distillation in small copper stills, the grappa is aged for at least three years - twice as long as the time required to obtain a Grappa Riserva - in Ornellaia's own<br />barrels.<br /><br />It is then blended with the reserves from previous years to obtain greater breadth and character. To guarantee its craftsmanship, the grappa is distilled, blended and bottled<br />in the same distillery. BERNARDI bacon - the time to the maturity is esteemed to us<br /><br />Today as at that time we process after traditional production procedure nearly all parts of the pig, e.g., the leg, the square, the pork nape, the belly, the shoulder and the<br />cheek. In addition to this already very unusual assortment we still produce the traditional farm bacon which is produced without exception of local pigs. This is marked as a<br />rule with our fire sign belonging to company. Because of the different bandage fabric of the single meat parts we are able with the use of one single salt/herbs-mixture to give<br />this one own individual character and taste.<br /><br />The salt spice mixture protected since generations refined every now and then is one from herbs, berries, salt and other spices composite recipe which vouches for the<br />unique and distinctive taste of our products. Besides, we place great value of the fact that some berries not to ground, but traditionally are rammed to heat up the contained<br />essence oils on no case and to cause therefore restorative bitter substances.<br /><br />Our bacon becomes salted with 2.3% on 1 kg of meat. The brine time amounts four weeks and all bacon sides are restacked weekly, besides, must be always also<br />respected the temperature of the brine cell.<br /><br />The maturity of a good bacon determines the nature only. Almost all Scotch whisky is matured in casks previously used<br />by Bourbon distillers. When they are brought to Scotland and used for the first time they are known as 'First Fill'.<br /><br />Our Malt Master tastes the aged whisky, cask by cask and selects only those characterised by sweetness and subtle oak vanilla to be bottled as The Balvenie Single<br />Barrel First Fill.<br /><br />A series of 'limited editions' - Each bottle is one of no more than 300 drawn from a single cask and bears the number of the cask in which it was matured.<br />Tasting notes<br /><br />Nose: Notes of honey, overlaid with sweet fruits and subtle spices.<br />Palate: Rich and complex with deep vanilla oak.<br />Finish: Sweet and persistent.<br />

Provocative spicy notes appear just before its nuttiness and terrific acidity<br />cuts through the sweetness. With a truly unforgettable finish.<br /><br />Each wine (Oloroso and Pedro Ximénez) is matured, separately in its own solera for 12 years. Once blended together, the resulting sherry is returned to a 45-cask solera for<br />a further 3 years ageing. In centuries gone by, casks with sherry were lashed to ships sailing for the Indies and were found to develop an extraordinary smoothness and<br />complexity. Lustau has revived this style of sherry in the East India wine.<br /><br /><br />ALCOHOL: 20 %<br />VERAGE AGE: 15 años<br />PROFILE: Sweet<br />Fresh, mineral and pungent on the nose with almonds and bakery notes. Dry and crisp, yet rich and with a full finish.<br /><br />PAIRINGS:<br />This wine is a perfect companion to light desserts and cakes, but can also be served with creamy cheeses or foie-gras.
