<br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence. Calabria and the Old Customs Warehouse were my life. Every day was like the first, we were engrossed in the work we loved more than anything else. We watched with<br />passion as Giocondo, who had a flair for everything in his trade, a man of few words and a master of life. The botanicals in his hands expressed extraordinary and<br />sometimes unthinkable things. The harvesting of bergamot and citron was a sacred time for him, and one that was sure to hold secrets. Jefferson was the most curious. He<br />would always try to follow him, most often surreptitiously, to try to understand what the secret was to producing such a natural and unique bergamot and citron liqueur. We<br />would leave, even before dawn, with his little cart and empty baskets to reach that magical place, even further south than the Old Customs Warehouse, four, maybe five<br />hours away. Once there, I was struck by the scents in that wonderful garden, something unique and magical. Giocondo with much patience and control began picking the<br />fruits one by one, which were sacred to him, he had a deep respect for the place. Once finished we set off for home, strangely enough I had the impression that it took much<br />less time than the outward journey, perhaps it was because of the desire to fulfil a dream. When we arrived, Giocondo wasted no time in starting the work. I still remember<br />his rough hands full of the essences of those wonderful fruits. He would complete the work by taking it to his 'Dark Room', no one could get in there. He always repeated:<br />'Silence!'. I always thought there was something secret and mysterious there. I hope that those who will be lucky enough to taste this liqueur will not seek explanations or<br />mathematical formulas, but will experience the passion, the emotions and the sacrifices of those who work the land every day to create this.<br /><br />Family heritage. So says the label. Products created by the skill of Maestro Giocondo, owner of the Vecchio Magazzino Doganale and expert in fruits, herbs and spices, but<br />above all adoptive father and guide of our characters. Working with Giocondo was not easy, the days were intense to the end, he was a cursed Calabrese. I will never stop repeating 'cursed'... That year my back pain was<br />tormenting me more and more every day. My salvation, as usual, was Gil. The doctor found in Sila, by chance or luck, something unique and wonderful, a kind of mud that<br />he expertly heated in a container over hot coals. It was miraculous for my pain. The experience gained on one of his trips to London led him towards the creation of a<br />masterpiece. With the very rural technique of peating, he managed to distil an out-of-this-world 'peated' gin ... Too bad it was little.<br /><br />Gil Torbato Italiano. The only peated Gin in the world. A distillate born thanks to the richness of our territory, in Calabria, in the beautiful setting of Sila, we brought peat back<br />to light. In fact, some historical books speak of it as a real wealth. In an ancestral way, we combine our 'low altitude' juniper with peat to create Italian Torbato Gin, always<br />keeping faith with the rural distillation method. A true explosion of terroir. Gil The Authentic Rural GIN...

My friend Gil will certainly help me live a few more years. He knows more than the devil, medicine and alchemy were his life. He paid attention to facts and curiosities from<br />all over the world. At the Old Customs Warehouse, it was not difficult to hear surreal stories and tales. That year, a traveller told a crazy story that happened in a village not<br />far from us, called Rocca Imperiale; a few words were enough to intrigue him and I knew immediately that he would not waste a moment exploring that dangerous place. I<br />learned on his return, with a hint of envy, that he had found the antidote to the poison of the viper of Rocca Imperiale and not only that, he had discovered in that harsh and<br />rugged territory, the Juniper, which he called 'low altitude'. In distilling the berries combined with other botanicals, he used all his medical and alchemical knowledge to<br />create an authentic, rural Gin.<br /><br />I will never forget his words to describe his experience: 'the rain falls sublimely on my juniper, softening the harsh parts of this territory of Rocca Imperiale, capable of giving a<br />unique fruit, never discovered, never explored. I am jealous of things that are not mine, the possessive instinct destroys me, my hands are full of thorns, my feet hurt, my<br />tiredness seems to vanish at the mere thought that those who try this Gin will feel something unique'. He had a point and his achievements speak for themselves.<br /><br />Gil The Authentic Rural Gin. 'I never dreamed of making a gin without our main botanical.'<br />An authentic gin that was born from a true discovery, a precious distillate with a rural production method. Juniper from 'low altitude' and PGI lemons from Rocca Imperiale are<br />the main botanicals. It is also distinguished by its original colour. A true hymn to the territory. Original in blending, in the great classics, we like the idea of a Fizz or a<br />Collins. Enjoyed neat it brings out its Mediterranean character. 'Gil is not fashion.<br />
