Altemasi Riserva Graal 2013<br />TRENTO DOC CLASSIC METHOD<br />An elegant classic sparkling wine Riserva Millesimato that Cavit produces only with grapes from great vintages. Graal derives from medieval Latin with the meaning of<br />container, this name gained notoriety in the cycle of King Arthur's novels because it was associated with the cup used by Jesus during the Last Supper.<br /><br />Production area: The highest and most suitable hilly areas for sparkling wines in Trentino (Colline di Trento, Altopiano di Brentonico and Valledei Laghi). Medium-textured<br />soils of fluvial-glacial and volcanic nature, on average not very deep and situated at altitudes between 500 and 600 metres above sea level.<br />Grape varieties: 70% Chardonnay and 30% Pinot Noir with a yield of 70 hl per hectare.<br />Climate: After a mild winter with plenty of water, a spring with plenty of rain accompanied us until the beginning of June, followed by a hot, dry summer. Towards the end of<br />August, thunderstorms cooled the days and led to sudden drops in temperature at night. These sudden changes in temperature delayed the ripening process, postponing<br />the start of the harvest until 10 September.<br />Vinification and ageing: Manual harvesting into boxes preceded the traditional soft pressing of the perfectly ripe grapes, with separation of selected fractions of the must,<br />which fermented at a controlled temperature in stainless steel and barriques.frothing took place in May, after a period of maturation of the base wine.the first disgorgement<br />took place 68 months after tirage.<br />Analytical data:<br />Alcohol: 12.50% vol.<br />Total acidity: 6 g/l<br />Dry extract: 22 g/l<br />Residual sugars: 5 g/l<br />Contains sulphites<br />Organoleptic characteristics: White mousse with fine and continuous perlage; straw yellow colour with greenish reflections. Fine and intense bouquet with notes of apple<br />and citrus fruits, accompanied by hints of minerals, candied fruit and pastries. Fresh and balanced in the mouth. An important acidity highlights the texture and backbone<br />that support the long persistence and elegance of the wine: Roasted fish, white meat, cheese and stuffed pasta.<br />Serving temperature: 8 -10°C<br />

Swirl the glass and dip your nose into the torrents of tarry ropes, creosote and linseed oil rising from deep within the vortex. A collision<br />of waxy dark chocolate, warm blackcurrants and muscovado sugar pulls you under its spell with a burst of plump cherries and earthy pine needles leaping from its depths.<br />From salty seasoning comes a briny character with tangy crisp seaweed and smoky bacon swirling on the surface with hints of sweet vanilla, spicy cloves and blueberries.<br />Surrender to its dangerous depths with the heady force of menthol, treacle and chilli sauce.<br /><br />Taste: Plunge into the whirlpool and torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue. The first plunge brings forth chewy peppered<br />steak soaked in pepper sauce with the tang of crispy seaweed. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich<br />melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds. As the taste soaks in deeper, star anise and hickory dry out the palate before a surprise of<br />chalky effervescent violets fizz to the surface.<br /><br />Finish: Long, deep and remaining powerful into the finish with black tarry coffee, chocolate coated cherries and hot pepper sauce, the lingering memories of your mysterious<br />and daring journey into Corryvreckan.<br />

<br /><br />Ardbeg An Oa<br /><br />A welcome new addition to the Ultimate range. Ardbeg An Oa is singularly rounded, due in no small part to time spent in our newly established bespoke oak Gathering Vat<br />where whiskies from several cask types - including; sweet Pedro Ximenez; spicy virgin charred oak; and intense ex-bourbon casks, amongst others - familiarise themselves<br />with each other. The result is a dram with smoky power, mellowed by a delectable, smooth sweetness. Hallmark Ardbeg peat, dark chocolate and aniseed are wrapped in<br />smooth, silky butterscotch, black pepper and clove, before rising to an intense crescendo of flavour.<br /><br />Non chill-filtered with a strength of 46.6% ABV.<br /><br /><br />Color: Light Gold<br />Aroma: Rounded and smoky - like burning Applewood - with creamy toffee, aniseed, treacle and dates. A curious suggestion of juicy fruits, such as peach and banana. With<br />a drop of water, reminders of Ardbeg's classic fragrance - lime, pine resin, fennel, saddle soap and tar. A gentle waxiness, like fragrant candle wax, and hints of smoked<br />herbs. An Oa gives a final subtle reminder of the sea with briny notes and seaweed but always accompanied with creaminess.<br /><br />Taste: A smooth, creamy texture leads into a huge syrupy sweetness, flavours of milk chocolate, treacle toffee, aniseed, orange and smoky tea leaves. Gentle, sweet<br />spices (nutmeg &amp; cinnamon), some cigar smoke, and a very unusual flavour of grilled artichokes. Wood is always present in the spirit, gently nutty and reminiscent of a<br />carpenter's workshop. A long, sweet finish, with floral overtones, mint toffee and some gentle malty biscuit notes.<br /><br />Finish: Lingering, seductive, gentle yet intense, with flavours of aniseed, hickory and distant subtle smoke.<br />

The result is Ardbeg Wee Beastie and this tongue-tingling, beautifully smoky dram is the youngest<br />Ardbeg we've ever made.<br /><br />On the snout, intense aromas of cracked blacked pepper mingle with sappy pine resin and a sharp tang of smoke. Suddenly, an explosive mouthfeel bursts forth with<br />chocolate, creosote and tar. Savoury meats sink into the palate before the long salty mouthcoating finish slinks away. revealing the inner beast of this Islay icon.<br /><br />Young and intensely smoky, this is a dram untamed by age. Matured in ex-bourbon and Oloroso sherry casks, Wee Beastie is perfect for enjoying neat or as the mouth-<br />watering main ingredient in a powerfully smoky cocktail.<br /><br />Non chill-filtered at 47.4%.<br /><br />Colour: A glint of bright Gold (Auric)<br />Aroma: The first sniff alerts you to a nearby presence. heightened senses are filled with very bright, fresh herbal notes, with creeping hints of vanilla and pear. Rich Turkish<br />coffee mingles with sappy pine resin, with honey-glazed ham lurking in the background. With water, more herbal top notes like vetiver and fennel captivate and pull you in,<br />while beguiling scents of aniseed, green apple and leather cause you to drop your guard. Out of nowhere, a sharp tang of smoke and a crack of fresh black pepper fire<br />warning shots across the senses.<br />Taste: Suddenly, a rich, explosive mouthfeel bursts forth with chocolate, creosote and tar. A powerful blast of eucalyptus thrashes about with antiseptic lozenges and<br />aniseed. Fruit was picked with ripe flavour and a delicious concentration.<br />Vinification<br /><br />Following the harvest, the free-run was cold-settled, before racking and inoculation with selected yeast. Fermentation was carried out primarily in stainless steel tanks, with<br />approximately 5% of the blend fermented at warmer temperatures in old French oak vats. Sossó<br />DESCRIPTION<br /><br />Born in 1989, it takes its name from the small brook 'Sossó' that rises at the foot of the hill where the grapes come from. The result of a careful selection of Merlot and<br />Refosco dal Peduncolo Rosso grapes - with a small amount of Pignolo - from the oldest vineyards in Rosazzo, it is the result of meticulous vinification and ageing in small<br />barrels for eighteen months. Altitude 500/750 metres above sea level.<br />First year of production: 1971.<br />Annual bottles produced: 25,000.<br />Area, training system, planting density, yield: about 4.0 hectares; Guyot system; planting of 8,000 feet per hectare, rows of vines with a cordon and row pattern. Yield 8,000<br />kg/ha. Harvest: by hand, at the end of October.<br />Vinification: Destalking of the grapes, fermentation for 8 days in stainless steel at a temperature of 26 °C with daily remontages. Maturation in stainless steel for 8 months<br />and refinement for 5 months in bottle.<br />Tasting notes: intense ruby colour. On the nose fruity (raspberry) and floral (violet). Fresh and fruity on the palate, with soft tannins and hints of raspberry. Persistent finish.<br />Accompaniments: starters, first courses, cured meats, red meats, medium mature cheeses.<br />Fact: Produced by the Charrère family since 1971, this is the winery's historic wine and is today, as then, a skilful blend of red grape varieties grown in the old vineyards.<br />Sabla means sand in the local dia-lectum, due to the sandy composition of the soil.<br />Serving temperature: 16/18 °C.<br />
