About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow with a good presence of skeleton.<br />Cultivation: Sapling not less than 50 years old (4,500 per hectare).<br />Harvest: September.<br />Vinification: Manual harvesting of the slightly overripe grapes; destemming-crushing, cold pre-fermentation maceration and subsequent start of alcoholic fermentation with<br />indigenous yeasts.
