A wine with a great structure, elegant, rich in aromas and of remarkable longevity. These characteristics derive from a very low yield per hectare, the delayed harvesting of<br />selected grapes and maturation in steel for at least one year before bottling.<br /><br />Type of wine: dry white.<br />Area of origin: Castelli di Jesi hills in the area known as Classica.<br />Soil: medium-textured, with areas rich in clay alternating with sandy areas.<br />Grapes: pure Verdicchio.<br />Yield per hectare: 70 q<br />Processing: harvesting of the grapes when fully ripe with accurate selection; soft pressing of the whole bunches, cleaning of the cold must and fermentation at low<br />temperature.<br />Ageing: 15 months in stainless steel tanks at 10° C on the noble lees and maturation in the bottle for 4 months in a thermo-conditioned room.<br />Colour: straw yellow.<br />Intense, elegant, fruity bouquet with hints of citrus fruits.<br />Taste: persuasive, soft, with great character, long lasting flavour, warm and elegant.<br />Consumption: up to 10 years.<br />Recommended with first courses, fish and white meat with aromatic herbs.<br />Serving temperature: 12° C<br />

HISTORY: Located in the Highland town of Alness, Dalmore Distillery boasts the oldest stills in the region, one of which has been in use since 1874! In fact, the distillery<br />still uses several stills for production, overseen by legendary master distiller Richard Paterson. For ageing, Dalmore uses a wide range of sherry casks: Oloroso, Amoroso,<br />Mathusalem, etc. from the Gonzales Byass vineyards in Andalusia. Once matured, the different varieties of barrels are assembled to create the various expressions within<br />the range. The deer that adorns each bottle of Dalmore is the coat of arms of the Mackenzie family, the historic owners of the distillery.<br /><br />PRODUCT: Initially left to mature in ex-bourbon American oak casks. The liquid is then divided into three different ex-oloroso sherry casks: Amoroso, Apostoles and<br />Matusalem. Each of these casks gives the whisky its individual and unique characteristics. The three liquids are then reassembled and left to rest.<br /><br />PROFILE: On the nose bitter orange marmalade, cinnamon and nutmeg. HISTORY: In 2015, The Other Guys decided to change its name to 3 Badges after moving its administrative offices to the old fire station in Sonoma, California. August<br />Sebastiani, a Tuscan-born winemaker and owner of the company, discovered numerous documents that testified to his family's involvement in the building's construction. His<br />grandfather had worked as a volunteer and received 3 badges for his career. 3 badges has thus become a symbol of returning to the roots, celebrating the passion for<br />commitment and craftsmanship as the cardinal points of the company.<br /><br />PRODUCT: Kirk and Sweeney was a wooden schooner known for smuggling rum from the Caribbean to the North East during the early years of Prohibition. It is a molasses<br />rum of Dominican origin aged for 18 years.<br /><br />PROFILE: Complex and intriguing, it touches on a wide range of aromas, from the intensity of vanilla to notes of sherry and grapes, underpinned by the fragrance of roasted<br />sugar cane. A selection of barrels and<br />small batches of exclusive cognacs chosen directly from passionate producers, each with their own personal savoir-faire, a guarantee of quality and unique products.<br /><br />PRODUCT: Now in their fifth generation of Cognac producers, Blandine and Anne-Laure Conte have taken over the reins of the family business comprising 24 hectares<br />spread over three Crus of the Cognac AOC. This vintage was produced in the Petit Champagne region from Ugni Blanc grapes.<br /><br />PROFILE: Distilled without yeast for greater ?neness, it gives us an original and medicinal bouquet. AMARONE CLASSICO DELLA VALPOLICELLA<br />Type: Dry red<br />In one definition: the King The full name 'Am' refers to an unfinished work. The shape of the 'A' is reminiscent of a vat, symbol of the wine world, but also of a hair clip,<br />emblem of a feminine wine.<br />Amarone Classico della Valpolicella DOP Protected Designation of Origin<br />Country/Region: Negrar, Sant'Ambrogio di Valpolicella (Verona)<br />Soil type: calcareous, clayey<br />Grapes: Corvina40%, Corvinone30%, Rondinella15%, Oseleta10%, Croatina5%.<br />Analytical data: alcohol15.5%, residual sugars7/8g/l total acidity 6.33g/l, dry extract 31g/l pH3.50<br />Vineyard operations: the grapes destined for Amarone come from the oldest vineyards. Organic fertilisation and manual pruning; bud selection, defoliation, thinning of the<br />bunches.<br />Harvest between the 2nd and 3rd decade of September in trays.<br />Natural drying (without the use of dehumidifiers) for a minimum of 3 months.<br />Vinification and ageing: harvested in January, the grapes remain in steel/cement tanks for the time necessary to start fermentation without the use of selected yeasts or<br />other biotechnologies. There is little pumping over and punching down, with contact time with the marc for over two months. After racking, the wine matures in Slavonian oak<br />barrels for a minimum of 5 years. From this moment on, only regular topping up is carried out; time slowly shapes the characteristics. This is followed by ageing in the bottle<br />for a minimum of 1 year. Amarone is produced only in important vintages.<br />Ideal pairing: it is at its best with roasted meats, boiled meats and mature cheeses such as Parmigiano Reggiano or Grana Padano. Drunk alone at the end of a meal, it is<br />superb.<br />Serving temperature: 18°C<br />Visual analysis: Intense ruby red colour, important in the glycerine and with garnet reflections as it ages.<br />Olfactory analysis: notes of ripe cherries, morello cherries and slightly dried plums, spices.<br />
