COR RÖMIGBERG Cabernet Sauvignon<br />fun at the adventure<br /><br />In the 1980s, Alois Lageder's discussions with winemakers from all over the world, such as the legendary pioneer of American viticulture Robert Mondavi and several chateau<br />owners from Bordeaux, gave him the impetus to introduce Cabernet Sauvignon and Petit Verdot in trellis training in this vineyard, which was originally planted with the<br />Vernatsch grape. Thus, in 1986, the first larger vineyard in South Tyrol was planted in dense planting on a wire frame, which caused great discussion. This plot, which has<br />been called 'heart' (lat. 2013<br />Under the supervision of Lodovico Antinori Biserno is our eponymous wine. A thought-provoking wine, Biserno reflects the excellent terroir and micro-climate of the coastal<br />area of the Upper Maremma. Only the finest grapes are selected for the blend, resulting in a wine of depth, intensity, complexity, longevity and elegance.<br />Estate: Tenuta di Biserno<br />Classification: Indicazione Geografica Tipica di Toscana<br />Grapes: Cabernet Franc with Merlot and Petit Verdot<br />Vineyards: Soil type is part clay, part Bolgheri conglomerate. Training is cordone speronato (spurred cordon). Density is 6,500 vines per hectare.<br />Seasonal summary 2013: A wet winter and spring resulted in good water reserves in the ground for the summer. The summer temperatures were back to 'normal' without<br />the periods of excessive heat experienced the previous few vintages. A rainfall the last week of August gave the vines a good boost and prolonged the ripening<br />process. The fine weather continued through September. All this combined gave optimum ripening conditions and a good balance between sugar ripeness, phenolic<br />ripeness and acidity.<br />Harvest: In 2013 the harvest began the second week of September and finished the second week of October. All harvesting is done by hand.<br />Vinification: Grapes are strictly sorted both before and after destemming. Fermentation takes place in stainless steel vats for 3 to 4 weeks at 28°C. 60% of<br />the wine undergoes malolactic fermentation in oak barrels, the remainder in stainless steel.<br />Ageing: The wine is aged for 15 months in 90% new French oak barriques and the rest in one year old barrels. The wine is further aged for at least 12 months in the bottle<br />before release.<br />Alcohol: 14.5%<br />Total Acidity: 4.7 g/L<br />

<br />Aqua Vitae Le Pergole Torte<br /><br />This product is obtained by steam distillation from the dripping marc of Sangiovese grapes from the Le Pergole Torte vineyard, located on the Montevertine Estate.<br />CHARACTERISTICS:<br /><br />Following the distillation process, the wine is aged in oak barrels for approximately four years, followed by bottling.<br /><br />Aqua Vitae is the result of the collaboration between Distilleria Artigiana di Gioacchino Nannoni, which directly takes care of the entire distillation, ageing and bottling<br />process, and Azienda Agricola di Montevertine, which supplies the raw materials.<br />We think that, given the particular characteristics of this product (amber colour, smoothness on the palate and nose), the term 'grappa' is a bit reductive.<br /><br />When tasting Aqua Vitae, other types of spirits come to mind, such as Armagnac.<br />

One Merlot vineyard planted an average of 24 years ago<br />located in the municipality of Cazzago San Martino. One Cabernet Franc vineyard planted an average of 23 years ago located in the municipality of Passirano.<br /><br />Harvest period<br />30 September 2008.<br /><br />Average yield per hectare<br />8,700 kilograms of grapes, equivalent to 5,050 litres of wine (must-to-fruit ratio 58%).<br /><br />Vinification<br />Maurizio Zanella is obtained from the separate fermentation of Cabernet Sauvignon, Merlot and Cabernet Franc grapes from Ca' del Bosco's finest vineyards. As soon as the<br />grapes are picked, using small cases, they are graded and chilled. Each bunch is selected by expert cellar staff before being transported over the maceration vat.<br />Destemming causes the berries to fall into the vat from above by gravity. This avoids the traditional pumping systems that would produce unwanted herbaceous aromas. At<br />the 2008 harvest, alcoholic fermentation and maceration took 22 days, with careful monitoring of temperature and punch-downs. Pump-overs were performed daily using a<br />pair of lift tanks in which the wine, drawn off from the bottom of the vat, is transferred by gravity. The wine is lifted by the flying tanks and poured into the high-capacity vat to<br />submerge the cap. There is no more natural or effective way of delicately extracting colour and tannins. The still-warm wines are drawn into small oak casks, 60% of which<br />are new, from selected wood seasoned for at least three years. Only in midwinter, when malolactic fermentation is complete, is the wine racked and the various lots<br />blended. This is how we make Maurizio Zanella, which continues to mature in wood for about 14 months. Later, the various parcels are blended and the wine is bottled<br />naturally by gravity flow. Innovative bottling systems ensure that the wine is not subjected to oxidative stress or disturbance, and that no further sulphites are added. Integrity<br />and healthfulness are guaranteed.
