The starting point is the highest quality herbs and flowers that are selected by expert mountaineers in the alpine landscape of the Cuneo valleys. Bordiga is a very<br />special distillery, specialising in rigour and respect for tradition. Its strong point is the medicinal alpine herbs still harvested by hand and dried at high altitudes by mountain<br />people in an uncontaminated environment. This means that the botanicals used are spontaneous, and therefore intrinsically organic. They are harvested without the aid of<br />engines, without pesticides, fertilisers or fungicides and, above all, with great attention to product quality and respect for the environment. Each production, just like in the<br />past, is totally conditioned by the changing seasons and climate. The yeast is added and fermentation begins. The liquid obtained is distilled until it reaches<br />80% alc./vol. and then diluted with water to reach 62.5% alc./vol.<br />COLOUR: amber yellow<br />AROMA: complex, with hints of caramel, oak wood, vanilla and brown sugar<br />TASTE: The presence of wheat makes the sensation on the palate more delicate compared to a rye Bourbon. The finish is persistent with flavors of cherry, raspberry and hazelnut.<br />

For connoisseurs who know how to indulge in life's slow pleasures.<br /><br />The alcoholic fermentation of the marc takes place in the must and then in the cellars, a process that guarantees a raw material rich in the best aromatic elements. The<br />marc is collected fresh from selected suppliers and is also stored for a few months, starting from the time of the first racking. Distillation is carried out in a discontinuous<br />plant with eight copper stills, using direct steam to produce a 'raw' grappa with an alcohol content of around 75 degrees. The 'transformation' to the final alcohol content<br />(50°) is done by dilution with water and cold filtration, at a temperature that guarantees the preservation of the aromatic component.<br /><br />A crystal-clear grappa, it has a rich, fine aroma and rigorous scents. Soft taste.
