To celebrate the 100th anniversary of DOMENIS1898, a grappa with an important, fine and balanced character.<br /><br />Strongly aromatic yet rounded, it surprises with the infinite sensations it offers to the taste. Certainly to be meditated, slowly, to be pervaded by the thousand bouquets on<br />the nose and sensations in the mouth.<br /><br />The marc is collected fresh, even fermented, from selected suppliers. Distillation takes place in a discontinuous plant with eight copper stills, using direct steam. The use of<br />direct steam at a low temperature (just over 100°), which is blown into the distillation at the base of the stills, makes it possible to extract the volatile components from the<br />marc mass without damaging them, especially the aromatic ones.<br /><br />The provenance of white grape marc contributes to denote a strong aromatic personality, the contribution of black grape marc gives unmistakable roundness and harmony.<br /><br />The gradation chosen for this grappa (60°) clearly enhances the aromatic charge typical of grappa with an incredible softness in spite of the significant alcohol content, while<br />also maintaining an elegant balance and a pleasantly prolonged persistence.<br /><br />Typology: young grappa<br />Alcohol content: 60% vol.<br />Raw materials: pomace<br />Serving temperature: 18°C<br />

<br />PLUM<br /><br />For the plum distillate of the Zu Plun distillery, only the plums typical of South Tyrolean mountain farms are used, which grow directly on the Plunhof farm at an altitude of<br />almost 1100 metres. In this climate, which is characterised by strong temperature fluctuations, small, compact fruits ripen with a more concentrated aroma than usual<br />cultivated plums. It is this aroma that should fully develop in the plum brandy, which is why the tree-ripe fruits are carefully pitted before further processing. The hand-picked<br />and prepared fruit is gently mashed. After natural fermentation without additives, the mash is distilled twice. <br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence.
