<br />PLUM BRANDY OLD<br /><br />Plum brandy old. For the plum brandy from the Zu Plun distillery use is made exclusively of typical plums of South Tyrol farms, which are grown directly by Plunhof at about<br />1100 m altitude. The plums that grow in this climate characterised by strong temperature oscillations are small and compact, with a more concentrated aroma than common<br />fruits. It is this aroma that is expected to reveal itself to the full in the plum brandy, which is why the ripe fruits are cautiously stoned before further processing. The fruit thus<br />handpicked and prepared is carefully mashed. After natural fermentation without additives the pulp is distilled twice. <br />Ardbeg Uigeadail<br /><br />Pronounced 'Oog-a-dal', it's a special vatting that marries Ardbeg's traditional deep, smoky notes with luscious, raisiny tones of old ex-Sherry casks. Ardbeg Uigeadail was<br />voted by the 120,000+ strong Ardbeg Committee as their favourite Ardbeg.<br /><br />Non chill-filtered at 54.2% ABV.<br /><br />Color: Deepest Gold.<br />Aroma: Rich and weighty with heady and smoky aromatics. At full strength, the initial aroma is a beguiling mix of warm Christmas cake, walnut oil and parma violets fused<br />with fresh ocean spice, cedar and pine needles falling from the Christmas tree. A smouldering coal fire and the scent of well-oiled leather brings warmth. The sweetness of<br />treacle toffees and chocolate-coated raisins emerge through the smoke. With water, the deep smokiness increases in intensity, reminiscent of a fired Christmas pudding.<br />Rich flowering currants and warm baked banana and walnut bread are served with simmering mocha espresso.<br /><br />Taste: Full flavoured and rich with a deep mouth-coating texture, the taste is an intriguing balance between sweet, spicy and deep smoky flavours. The flavour is initially<br />sweet. A burst of winter spices sets off a smoky-spicy explosion countered by a sumptuous mid-palate of honey glazed smoked food and chewy treacle. Waves of deep<br />smoky tones and rich aromas build up on the palate like a fine Montecristo cigar.<br />Finish: Amazingly long and chewy with lingering raisiny, deep mocha tones and rich aromatic smoke into the perfectly integrated finish.<br />

SECOLO DOMENIS 50 cl<br /><br />To celebrate the centenary of DOMENIS1898, a grappa with an important character, fine and balanced.<br /><br />Strongly aromatic yet rounded, it surprises with the infinite sensations it offers to the taste. Certainly to be meditated on, slowly, to be pervaded by the thousand bouquets<br />on the nose and sensations in the mouth.<br /><br />The marc is collected fresh, even fermented, from selected suppliers. Distillation takes place in a discontinuous plant with eight copper stills, using direct steam. The use of<br />direct steam at a low temperature (just over 100°), which is blown into the distillation process at the base of the stills, makes it possible to extract the volatile components<br />from the marc mass without damaging them, especially the aromatic ones.<br /><br />The fact that the pomace comes from white grapes contributes to a strong aromatic personality, while the addition of black grape pomace gives it an unmistakable<br />roundness and harmony.<br /><br />The alcohol content chosen for this grappa (60°) clearly enhances the aromatic charge typical of grappa with an incredible softness in spite of the high alcohol content, while<br />maintaining an elegant balance and a pleasantly long finish.<br /><br />Typology: young grappa<br />Alcohol content: 60% vol.<br />Raw materials: marc<br />Serving temperature: 18°C<br />50 cl bottle with case<br />
