This very important stage is carried out slowly in an ancestral manner with the<br />help of ancient water piston presses, which respect the crushing of the grapes to allow the juices to pass through the skins. The wines produced are carefully distilled in a<br />handcrafted still, refined in a copper mass, which is indispensable for obtaining refined eaux-de-vie.
