The fruits soon form a pasty mass from which a sweet and fragrant juice is obtained. Fermentation of the<br />fruit begins after one or two days and lasts five to six weeks Its progress must be carefully monitored. Distillery<br />Romano Levi<br /><br />Features<br /><br />Romano Levi always kept a young, fresh grappa for the railwaymen at the local Neive station. They needed it, he said, to work the cold nights in the Langhe. The warmth of<br />the grappa and its intense, pleasant perfume gave new strength and vigour...<br /><br />TYPOLOGY: aged white grappa.<br />ORIGIN AND STORAGE OF THE VINACCIA: The grapes come from producers of Roero Arneis Docg, to the left of the Tanaro river.<br /><br />The marc, chosen to be fresh and still dripping with must, is fermented according to an ancient recipe of Serafino Levi.<br /><br />ALAMBICCO: discontinuous copper still, the only one in the world, still working with direct fire for the distillation of grappa.<br /><br />SERVING SUGGESTIONS: suitable for the end of the meal, suitable for the preparation of cocktails.<br /><br />SERVING TEMPERATURE: 14°.<br /><br />Grape varieties:<br />Arneis Docg<br /><br />Vinification:<br />AGEING: in barriques of about 220 litres, in wood of different essences, kept in a room with the right humidity and at a constant temperature between 14 and 19 degrees C°.<br /><br />Tasting notes:<br /><br />Straw yellow in colour with golden reflections, the nose releases hints of ripe white fruits, pear, peach and pineapple.<br /><br />On the palate it is characterised by its fresh, soft and intense taste.<br />
