<br />PLUM BRANDY OLD<br /><br />Plum brandy old. For the plum brandy from the Zu Plun distillery use is made exclusively of typical plums of South Tyrol farms, which are grown directly by Plunhof at about<br />1100 m altitude. The plums that grow in this climate characterised by strong temperature oscillations are small and compact, with a more concentrated aroma than common<br />fruits. It is this aroma that is expected to reveal itself to the full in the plum brandy, which is why the ripe fruits are cautiously stoned before further processing. The fruit thus<br />handpicked and prepared is carefully mashed. After natural fermentation without additives the pulp is distilled twice. For the Plum Brandy Old the distillate is stored fort wo<br />years exclusively in an oak barrel, where it finally combines with the typical notes of cinnamon, caramel and vanilla.<br /><br />Raw material: local farmer's plums from South Tyrol, mostly Plunhof's own production<br />Distillation method: discontinuous, distilled twice, heated in a water bath using a copper still<br />Storage/ageing (Old): 3 years in a small oak barrel<br />Alcohol content: 42 Vol%<br />Content: 0.4 l<br />Colour/clearness: Bernstein-coloured distillate with glittering gold hues<br />Nose: Fruity body, plus aromas of cinnamon and caramel<br />Palate: clean, smooth stylistics with gentle almond note<br />Finish: persistent, outstandingly typical, outstanding, warm barrique tones<br />

Working with Giocondo was not easy, the days were intense to the end, he was a cursed Calabrese. I will never stop repeating 'cursed'... That year my back pain was<br />tormenting me more and more every day. My salvation, as usual, was Gil. The doctor found in Sila, by chance or luck, something unique and wonderful, a kind of mud that<br />he expertly heated in a container over hot coals. It was miraculous for my pain. The experience gained on one of his trips to London led him towards the creation of a<br />masterpiece. With the very rural technique of peating, he managed to distil an out-of-this-world 'peated' gin ... Too bad it was little.<br /><br />Gil Torbato Italiano. The only peated Gin in the world. A distillate born thanks to the richness of our territory, in Calabria, in the beautiful setting of Sila, we brought peat back<br />to light. In fact, some historical books speak of it as a real wealth. In an ancestral way, we combine our 'low altitude' juniper with peat to create Italian Torbato Gin, always<br />keeping faith with the rural distillation method. A true explosion of terroir. My friend Gil will certainly help me live a few more years. He knows more than the devil, medicine and alchemy were his life. He paid attention to facts and curiosities from<br />all over the world. At the Old Customs Warehouse, it was not difficult to hear surreal stories and tales. That year, a traveller told a crazy story that happened in a village not<br />far from us, called Rocca Imperiale; a few words were enough to intrigue him and I knew immediately that he would not waste a moment exploring that dangerous place. I<br />learned on his return, with a hint of envy, that he had found the antidote to the poison of the viper of Rocca Imperiale and not only that, he had discovered in that harsh and<br />rugged territory, the Juniper, which he called 'low altitude'. In distilling the berries combined with other botanicals, he used all his medical and alchemical knowledge to<br />create an authentic, rural Gin.<br /><br />I will never forget his words to describe his experience: 'the rain falls sublimely on my juniper, softening the harsh parts of this territory of Rocca Imperiale, capable of giving a<br />unique fruit, never discovered, never explored. I am jealous of things that are not mine, the possessive instinct destroys me, my hands are full of thorns, my feet hurt, my<br />tiredness seems to vanish at the mere thought that those who try this Gin will feel something unique'. He had a point and his achievements speak for themselves.<br /><br />Gil The Authentic Rural Gin. 'I never dreamed of making a gin without our main botanical.'<br />An authentic gin that was born from a true discovery, a precious distillate with a rural production method. He was a brilliant guy and full of surprises. We did not see him for months, when we suddenly discovered that he was in Paris at the Universal Exhibition for the inauguration<br />of the Eiffel Tower. During his stay in the French capital he stayed in the most famous district of Paris, Le Pigalle. There was the Moulin Rouge, an establishment where he<br />spent fantastic evenings. He met Madame Milu, a beautiful dancer... One look was enough to fall in love. It was a beautiful love story. Unknowingly, or perhaps out of<br />curiosity, I read some beautiful letters.<br /><br />Madame Milu Liqueur to Drink on Demand. A highly digestive, innovative and unique liqueur that traces and encapsulates the alchemy of the Italian style of liqueur<br />production from the 19th century to the present day. Its authentic recipe encompasses selected botanicals sourced from the Vecchio Magazzino Doganale, in Calabria. The<br />chamomile, mint and marjoram are still hand-picked and processed in separate infusions from fresh. Lemon balm, fennel seeds and wormwood processed by distillation<br />together with a secret composition of medicinal herbs, above all spaccapietra. The resinous part was initially obtained from the pine cones of Sila. Today, as luck would have<br />it, there are a few pine trees in our soil, which is wonderful.
