The yeast is added and fermentation begins. The liquid obtained is distilled until it reaches<br />80% alc./vol. and then diluted with water to reach 62.5% alc./vol.<br />COLOUR: amber yellow<br />AROMA: complex, with hints of caramel, oak wood, vanilla and brown sugar<br />TASTE: The presence of wheat makes the sensation on the palate more delicate compared to a rye Bourbon. Vanilla, wheat and oak are perceived.<br />TASTING NOTES: Pleasant and warm persistence, prolonged by hints of spices.<br /><br />DESCRIPTION: The 'Rebel Yell' brand was created for the Stitzel-Weller Distillery by Charles R. Farnsley (former mayor of Louisville) in the mid-1900s, around the 100th<br />anniversary of the original Weller Company, with the idea of small-batch distillation for exclusive distribution in the southern United States. Rebel Yell is a Kentucky Straight<br />Bourbon Whisky and the original old recipe dates back to 1849. Rhum Rhum Blanc<br />Rhum Rhum Marie Galante<br /><br />70 cl / 41 °<br />Typology: Pure Single Rhum Agricole<br />Raw material: Pure cane juice<br />Fermentation: Own selected yeasts<br />Method of production: Pot Still distillation<br />Box: Yes<br />Why it is different<br /><br />Rhum Rhum Blanc 41 ° is the Pure Single Agricole Rhum produced from an ancient variety of sugar cane, the Rouge B47.259, almost disappeared from the Antilles. Once<br />perfectly ripe, the canes are cut by hand with traditional 'coutelas' and transported to the distillery on 'cabrouets' pulled by bulls. The freshly pressed juice is not diluted, as<br />is usual in the production of rhum agricoles; fermentation takes place in open vats at a controlled temperature and lasts up to 5/6 days. After distillation there is a long<br />period of rest in steel vats, lasting up to a year, during which the alcohol content is slowly lowered. Rhum Rhum Blanc is bottled at 41°.<br /><br />How I drink it:<br />Rhum Rhum Blanc 41° is very pleasant in the classic Ti' Punch with a very small addition of sugar. Excellent for classic cocktails such as the Mary Pickford.<br /><br />Focus:<br />In the mid-2000s, Luca Gargano realised a dream he had nurtured for years, that of producing the best rum in the world. To do so, he enlisted the help of maestro Gianni<br />Vittorio Capovilla and together they chose the enchanting island of Marie Galante, where at the time the best possible terroir could be found in the Caribbean. A first still was<br />installed at the Bielle distillery in 2005 and the second in 2007: two Müller bain-marie stills with a capacity of 300 and 1200 litres. The fresh, undiluted cane juice ferments<br />slowly in stainless steel cuves.<br />

This gave them a deformed limb holding the spade, causing it to hang downwards, like a monkey's posture.<br />

Drouin Pays D'Auge Reserve<br />Drouin France<br /><br />70 cl / 40 °<br />Typology: Calvados<br />Raw material: Apples<br />Fermentation: Indigenous yeasts<br />Method of production: Charentais Alembic<br />Box: Yes<br /><br />Why it is different:<br />We could call Drouin Pays D'auge the grand cru of the Calvados appellation, with very strict rules. The Réserve is made like all Drouin calvados: harvesting of the 30 apple<br />varieties and reaching maturity, champagne-style soft pressing with yields reduced to 65% to preserve the fragrance and freshness of the juice, spontaneous fermentation<br />with indigenous yeasts. The ciders for distillation are the youngest ones, which remain in stainless steel vats for several months, at least 5. They are fresh and fruity<br />fermented, not overly complex, and ideal for the production of distillates for short ageing. Distillation takes place in the traditional copper Charentais still, ageing in French<br />oak barrels for 4 years.<br /><br />How to drink it:<br />To be enjoyed neat in a tulip glass. Excellent when paired with chocolate desserts or a classic apple and pear cake.<br /><br />Focus:<br />Fermentation is a key process in the production of all Christian Drouin spirits: it all happens naturally with the distillery's indigenous yeasts. The freshly pressed juice<br />reaches the stainless steel vats, where it ferments and rests for at least 5 months, but in some cases up to 1 year. Based on the fermentation time, it is already clear what<br />type of calvados can be obtained. Those obtained from young ciders will be ideal for the distillation of younger, fresh and fruity calvados. The more mature and evolved ciders<br />are distilled from June onwards, but in some cases also in the autumn following the harvest, resulting in very complex and rich distillates, ideal for long ageing, particularly<br />for vintage wines.<br />

An important ingredient to create cocktails<br />with character and boldness, but also more suited for sipping on the rocks without the ice diluting the strength and heat of the rum too much.The design of the bottle and<br />packaging is modern and elegant, with the same graphical style of Ron Millonario 10 Aniversario Reserva and the same innovative transparent glass cap to retain the family<br />feeling, but in gold rather than in black.<br /><br />TASTING NOTES: it echoes the sweet fruits, vanilla and chocolate of the standard 10 Aniversario Reserva, but much more intense and concentrated. It has a richer<br />mouthfeel, almost tactile, and a more robust caress on the tongue and palate. The higher strength accentuates the drier and winey fl avours from the sherry casks too. Th e<br />result is something in-between the easy freshness of the 10 Aniversario Reserva and the sweeter and darker complexity of the Solera 15.<br />
