To celebrate the 100th anniversary of DOMENIS1898, a grappa with an important, fine and balanced character.<br /><br />Strongly aromatic yet rounded, it surprises with the infinite sensations it offers to the taste. Certainly to be meditated, slowly, to be pervaded by the thousand bouquets on<br />the nose and sensations in the mouth.<br /><br />The marc is collected fresh, even fermented, from selected suppliers. Distillation takes place in a discontinuous plant with eight copper stills, using direct steam. The use of<br />direct steam at a low temperature (just over 100°), which is blown into the distillation at the base of the stills, makes it possible to extract the volatile components from the<br />marc mass without damaging them, especially the aromatic ones.<br /><br />The provenance of white grape marc contributes to denote a strong aromatic personality, the contribution of black grape marc gives unmistakable roundness and harmony.<br /><br />The gradation chosen for this grappa (60°) clearly enhances the aromatic charge typical of grappa with an incredible softness in spite of the significant alcohol content, while<br />also maintaining an elegant balance and a pleasantly prolonged persistence.<br /><br />Typology: young grappa<br />Alcohol content: 60% vol.<br />Raw materials: pomace<br />Serving temperature: 18°C<br />

<br />PLUM<br /><br />For the plum distillate of the Zu Plun distillery, only the plums typical of South Tyrolean mountain farms are used, which grow directly on the Plunhof farm at an altitude of<br />almost 1100 metres. In this climate, which is characterised by strong temperature fluctuations, small, compact fruits ripen with a more concentrated aroma than usual<br />cultivated plums. It is this aroma that should fully develop in the plum brandy, which is why the tree-ripe fruits are carefully pitted before further processing. The hand-picked<br />and prepared fruit is gently mashed. After natural fermentation without additives, the mash is distilled twice. For the plum brandy from the Zu Plun distillery use is made exclusively of typical plums of South Tyrol farms, which are grown directly by Plunhof at about<br />1100 m altitude. The plums that grow in this climate characterised by strong temperature oscillations are small and compact, with a more concentrated aroma than common<br />fruits. It is this aroma that is expected to reveal itself to the full in the plum brandy, which is why the ripe fruits are cautiously stoned before further processing. The fruit thus<br />handpicked and prepared is carefully mashed. After natural fermentation without additives the pulp is distilled twice. Calabria and the Old Customs Warehouse were my life. Every day was like the first, we were engrossed in the work we loved more than anything else. We watched with<br />passion as Giocondo, who had a flair for everything in his trade, a man of few words and a master of life. The botanicals in his hands expressed extraordinary and<br />sometimes unthinkable things. The harvesting of bergamot and citron was a sacred time for him, and one that was sure to hold secrets. Jefferson was the most curious. He<br />would always try to follow him, most often surreptitiously, to try to understand what the secret was to producing such a natural and unique bergamot and citron liqueur. We<br />would leave, even before dawn, with his little cart and empty baskets to reach that magical place, even further south than the Old Customs Warehouse, four, maybe five<br />hours away. Once there, I was struck by the scents in that wonderful garden, something unique and magical. Giocondo with much patience and control began picking the<br />fruits one by one, which were sacred to him, he had a deep respect for the place. Once finished we set off for home, strangely enough I had the impression that it took much<br />less time than the outward journey, perhaps it was because of the desire to fulfil a dream. When we arrived, Giocondo wasted no time in starting the work. I still remember<br />his rough hands full of the essences of those wonderful fruits. He would complete the work by taking it to his 'Dark Room', no one could get in there. He always repeated:<br />'Silence!'. I always thought there was something secret and mysterious there. I hope that those who will be lucky enough to taste this liqueur will not seek explanations or<br />mathematical formulas, but will experience the passion, the emotions and the sacrifices of those who work the land every day to create this.<br /><br />Family heritage. So says the label. Products created by the skill of Maestro Giocondo, owner of the Vecchio Magazzino Doganale and expert in fruits, herbs and spices, but<br />above all adoptive father and guide of our characters. We did not see him for months, when we suddenly discovered that he was in Paris at the Universal Exhibition for the inauguration<br />of the Eiffel Tower. During his stay in the French capital he stayed in the most famous district of Paris, Le Pigalle. There was the Moulin Rouge, an establishment where he<br />spent fantastic evenings. He met Madame Milu, a beautiful dancer... One look was enough to fall in love. It was a beautiful love story. Unknowingly, or perhaps out of<br />curiosity, I read some beautiful letters.<br /><br />Madame Milu Liqueur to Drink on Demand. A highly digestive, innovative and unique liqueur that traces and encapsulates the alchemy of the Italian style of liqueur<br />production from the 19th century to the present day. Its authentic recipe encompasses selected botanicals sourced from the Vecchio Magazzino Doganale, in Calabria. The<br />chamomile, mint and marjoram are still hand-picked and processed in separate infusions from fresh. Lemon balm, fennel seeds and wormwood processed by distillation<br />together with a secret composition of medicinal herbs, above all spaccapietra. The resinous part was initially obtained from the pine cones of Sila. Today, as luck would have<br />it, there are a few pine trees in our soil, which is wonderful.
