TYPOLOGY: Fortified wine<br /><br />PRODUCTION AREA: Juillac-Le-Coq<br /><br />RAW MATERIAL: Cabernet Sauvignon 50%, Merlot 50%.<br /><br />DISTILLATION: Obtained from a mixture of fermented grapes and Cognac. Fermentation is stopped by adding cognac at 60° when the must reaches 10 degrees alcohol. The<br />result is a fortified must with an alcohol content of between 16° and 22°. They needed it, he said, to work the cold nights in the Langhe. The warmth of<br />the grappa and its intense, pleasant perfume gave new strength and vigour...<br /><br />TYPOLOGY: aged white grappa.<br />ORIGIN AND STORAGE OF THE VINACCIA: The grapes come from producers of Roero Arneis Docg, to the left of the Tanaro river.<br /><br />The marc, chosen to be fresh and still dripping with must, is fermented according to an ancient recipe of Serafino Levi.<br /><br />ALAMBICCO: discontinuous copper still, the only one in the world, still working with direct fire for the distillation of grappa.<br /><br />SERVING SUGGESTIONS: suitable for the end of the meal, suitable for the preparation of cocktails.<br /><br />SERVING TEMPERATURE: 14°.<br /><br />Grape varieties:<br />Arneis Docg<br /><br />Vinification:<br />AGEING: in barriques of about 220 litres, in wood of different essences, kept in a room with the right humidity and at a constant temperature between 14 and 19 degrees C°.<br /><br />Tasting notes:<br /><br />Straw yellow in colour with golden reflections, the nose releases hints of ripe white fruits, pear, peach and pineapple.<br /><br />On the palate it is characterised by its fresh, soft and intense taste.<br />

To celebrate the 100th anniversary of DOMENIS1898, a grappa with an important, fine and balanced character.<br /><br />Strongly aromatic yet rounded, it surprises with the infinite sensations it offers to the taste. Certainly to be meditated, slowly, to be pervaded by the thousand bouquets on<br />the nose and sensations in the mouth.<br /><br />The marc is collected fresh, even fermented, from selected suppliers. Distillation takes place in a discontinuous plant with eight copper stills, using direct steam. The use of<br />direct steam at a low temperature (just over 100°), which is blown into the distillation at the base of the stills, makes it possible to extract the volatile components from the<br />marc mass without damaging them, especially the aromatic ones.<br /><br />The provenance of white grape marc contributes to denote a strong aromatic personality, the contribution of black grape marc gives unmistakable roundness and harmony.<br /><br />The gradation chosen for this grappa (60°) clearly enhances the aromatic charge typical of grappa with an incredible softness in spite of the significant alcohol content, while<br />also maintaining an elegant balance and a pleasantly prolonged persistence.<br /><br />Typology: young grappa<br />Alcohol content: 60% vol.<br />Raw materials: pomace<br />Serving temperature: 18°C<br />
