Distillery<br />Romano Levi<br /><br />Features<br /><br />Romano Levi always kept a young, fresh grappa for the railwaymen at the local Neive station. They needed it, he said, to work the cold nights in the Langhe. The warmth of<br />the grappa and its intense, pleasant perfume gave new strength and vigour...<br /><br />TYPOLOGY: aged white grappa.<br />ORIGIN AND STORAGE OF THE VINACCIA: The grapes come from producers of Roero Arneis Docg, to the left of the Tanaro river.<br /><br />The marc, chosen to be fresh and still dripping with must, is fermented according to an ancient recipe of Serafino Levi.<br /><br />ALAMBICCO: discontinuous copper still, the only one in the world, still working with direct fire for the distillation of grappa.<br /><br />SERVING SUGGESTIONS: suitable for the end of the meal, suitable for the preparation of cocktails.<br /><br />SERVING TEMPERATURE: 14°.<br /><br />Grape varieties:<br />Arneis Docg<br /><br />Vinification:<br />AGEING: in barriques of about 220 litres, in wood of different essences, kept in a room with the right humidity and at a constant temperature between 14 and 19 degrees C°.<br /><br />Tasting notes:<br /><br />Straw yellow in colour with golden reflections, the nose releases hints of ripe white fruits, pear, peach and pineapple.<br /><br />On the palate it is characterised by its fresh, soft and intense taste.<br />

To celebrate the 100th anniversary of DOMENIS1898, a grappa with an important, fine and balanced character.<br /><br />Strongly aromatic yet rounded, it surprises with the infinite sensations it offers to the taste. Certainly to be meditated, slowly, to be pervaded by the thousand bouquets on<br />the nose and sensations in the mouth.<br /><br />The marc is collected fresh, even fermented, from selected suppliers. Distillation takes place in a discontinuous plant with eight copper stills, using direct steam. The use of<br />direct steam at a low temperature (just over 100°), which is blown into the distillation at the base of the stills, makes it possible to extract the volatile components from the<br />marc mass without damaging them, especially the aromatic ones.<br /><br />The provenance of white grape marc contributes to denote a strong aromatic personality, the contribution of black grape marc gives unmistakable roundness and harmony.<br /><br />The gradation chosen for this grappa (60°) clearly enhances the aromatic charge typical of grappa with an incredible softness in spite of the significant alcohol content, while<br />also maintaining an elegant balance and a pleasantly prolonged persistence.<br /><br />Typology: young grappa<br />Alcohol content: 60% vol.<br />Raw materials: pomace<br />Serving temperature: 18°C<br />

<br />PLUM<br /><br />For the plum distillate of the Zu Plun distillery, only the plums typical of South Tyrolean mountain farms are used, which grow directly on the Plunhof farm at an altitude of<br />almost 1100 metres. In this climate, which is characterised by strong temperature fluctuations, small, compact fruits ripen with a more concentrated aroma than usual<br />cultivated plums. It is this aroma that should fully develop in the plum brandy, which is why the tree-ripe fruits are carefully pitted before further processing. The hand-picked<br />and prepared fruit is gently mashed. After natural fermentation without additives, the mash is distilled twice. The plum as a prime fruit constantly challenges master distiller<br />Rabanser to improve his art and to strive for perfection and balance - an idea that is also found in the motif of the label: A rhinoceros balancing a ball.<br /><br />Raw material: Local South Tyrolean farmer's plums, mainly own harvest from Plunhof.<br />Distillation method: discontinuous, double distilled, copper still heated in a water bath<br />Alcohol strength: 42 Vol%<br />Volume: 0,5 l<br />Colour/clarity: crystal clear, colourless<br />Nose: Fruity body with aromas of cinnamon and caramel<br />Palate: clean, soft style with delicate almond notes<br />Finish: length throughout, present typicity<br />Tip: A coherent combination with dark chocolate<br />
