This means that the botanicals used are spontaneous, and therefore intrinsically organic. They are harvested without the aid of<br />engines, without pesticides, fertilisers or fungicides and, above all, with great attention to product quality and respect for the environment. 'Antica Formula'<br />The Italian Vermouth of excellence, sweet and vanilla.<br /><br />With a unique and unmistakable taste and a rich and structured body, this product was created by Antonio Benedetto Carpano, the inventor of the Vermouth product<br />category back in 1786 in Turin. Antica Formula has come down to us in its original and inimitable recipe thanks to Fratelli Branca Distillerie's passion and skill in keeping<br />the product unaltered over time, a product that stands out for its unique bouquet and unmistakable notes of vanilla. This 'nectar of the Gods' is characterised in taste and<br />aroma by an infusion of carefully selected mountain herbs and spices, including the precious saffron.<br /><br />Antica Formula is produced in limited quantities and packaged in fine blown-glass bottles. Sealed with a cork, the bottle is enclosed within a precious package. The label is<br />a reproduction of the original from 1786.<br /><br />Bright amaranth colour with amber veins, the bouquet of vanilla emerges on the nose, accompanied by notes of spices, citrus fruits and dried fruits such as sultanas and<br />cloves. The palate is rich and vanilla with notes of bitter orange, dates, cocoa beans, cherries and saffron.<br /><br />Ideal to drink with ice and a slice of orange, as an aperitif or after dinner. The Réserve is made like all Drouin calvados: harvesting of the 30 apple<br />varieties and reaching maturity, champagne-style soft pressing with yields reduced to 65% to preserve the fragrance and freshness of the juice, spontaneous fermentation<br />with indigenous yeasts. The ciders for distillation are the youngest ones, which remain in stainless steel vats for several months, at least 5. They are fresh and fruity<br />fermented, not overly complex, and ideal for the production of distillates for short ageing. Distillation takes place in the traditional copper Charentais still, ageing in French<br />oak barrels for 4 years.<br /><br />How to drink it:<br />To be enjoyed neat in a tulip glass. Excellent when paired with chocolate desserts or a classic apple and pear cake.<br /><br />Focus:<br />Fermentation is a key process in the production of all Christian Drouin spirits: it all happens naturally with the distillery's indigenous yeasts. The freshly pressed juice<br />reaches the stainless steel vats, where it ferments and rests for at least 5 months, but in some cases up to 1 year. Based on the fermentation time, it is already clear what<br />type of calvados can be obtained. Those obtained from young ciders will be ideal for the distillation of younger, fresh and fruity calvados. The more mature and evolved ciders<br />are distilled from June onwards, but in some cases also in the autumn following the harvest, resulting in very complex and rich distillates, ideal for long ageing, particularly<br />for vintage wines.<br />
