Distillery<br />Dartigalongue<br /><br />Characteristics<br />The continuous still at 58% vol. and the 'Charantais' system, recognised by the 1972 decree as being of superior quality thanks to the elimination of impurities and the<br />consequent obtainment of a more refined and elegant spirit, are used between Gers and Landes. In Hors d'Âge, the minimum ageing period of 7-8 years takes place in new<br />barrels (30%) of 400-litre Gascony oak.<br /><br />Soil: sandy-loamy.<br /><br />Grape varieties: Ugni Blanc, Baco and Folle Blanche.<br /><br />Tasting notes: on the nose, aromas of vanilla, plums, toasted oak and yellow fruit are expressed on the palate with a beautiful length and savoury, spicy notes.<br />

<br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence. One bottle of this distillate contains the aroma of more than 8 kg of fruit pulp.<br /><br />Raw material: Williams pears from Naturno and Burgraviato, Lana<br />Distillation method: discontinuous, in a copper still<br />Storage/ageing: -<br />Alcohol content: 42% VOL.<br />Content: 0.5 l<br />Colour-clearness: clear and colourless<br />Nose: Fruity aromas of fully ripe Williams pears<br />Palate: Transparent, pure-toned fruit notes with distinctive depth, mellow and well-structured<br />Finish: the finish of the most elegant among the pip fruit types stands out with remarkable, persistent length and a distinctive pithy-tart touch.<br />

He was a brilliant guy and full of surprises. We did not see him for months, when we suddenly discovered that he was in Paris at the Universal Exhibition for the inauguration<br />of the Eiffel Tower. During his stay in the French capital he stayed in the most famous district of Paris, Le Pigalle. There was the Moulin Rouge, an establishment where he<br />spent fantastic evenings. He met Madame Milu, a beautiful dancer... One look was enough to fall in love. It was a beautiful love story. Unknowingly, or perhaps out of<br />curiosity, I read some beautiful letters.<br /><br />Madame Milu Liqueur to Drink on Demand. A highly digestive, innovative and unique liqueur that traces and encapsulates the alchemy of the Italian style of liqueur<br />production from the 19th century to the present day. Its authentic recipe encompasses selected botanicals sourced from the Vecchio Magazzino Doganale, in Calabria. The<br />chamomile, mint and marjoram are still hand-picked and processed in separate infusions from fresh. Lemon balm, fennel seeds and wormwood processed by distillation<br />together with a secret composition of medicinal herbs, above all spaccapietra. The resinous part was initially obtained from the pine cones of Sila. Today, as luck would have<br />it, there are a few pine trees in our soil, which is wonderful. I 12 Cavalieri is an ancient still made entirely of copper, one of the few stills still in<br />existence, consisting of 12 small steam boilers with a discontinuous cycle, ideal for distilling marc from red grapes. Athanor plant with two bain-marie boilers of classical<br />design installed in 2001, used for the distillation of grapes, fruit and wine. Crisopea plant with two vacuum bain-marie boilers, installed in 2009 after years of research.
