Based in Nogaro, in<br />the heart of Bas Armagnac, it distils only wines from this area, reputed for the refinement of its crus.<br /><br />CHARACTERISTICS<br />Between Gers and Landes, the continuous still is used at 58% vol. and the 'Charantais' system, recognised by the 1972 decree as being of superior quality thanks to the<br />elimination of impurities and the consequent obtainment of a more refined and elegant spirit.The minimum ageing period of 7-8 years takes place in new (30%) Guasconian<br />oak casks of 400 litres. SOIL: sandy-loamy. GRAPES: Ugni Blanc, Baco and Folle Blanche.<br />TASTING NOTES<br />The intense amber colour anticipates clean hints of coffee and dried flowers. The palate has good texture, body and length with candied fruit aftertaste.<br />

Fermentation is stopped by adding cognac at 60° when the must reaches 10 degrees alcohol. The<br />result is a fortified must with an alcohol content of between 16° and 22°. The fruits soon form a pasty mass from which a sweet and fragrant juice is obtained. Fermentation of the<br />fruit begins after one or two days and lasts five to six weeks Its progress must be carefully monitored. <br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence.
